Applesauce Bread {Bundt Cake}

Get ready for your house to smell amazing as the sweet aroma of apples, brown sugar, and cinnamon fills the air! This versatile recipe can be made as either a bundt cake or two loaves of bread. You can easily cut the recipe in half to make just a single loaf. I love having options!


Applesauce Bread {Bundt Cake}
Yield: 2 loaves (or 1 bundt cake)

Ingredients

Directions
  1. Preheat oven to 350°F. Grease 2 loaf pans with Crisco, line with parchment (fold extra over sides for easy removal after baking), then grease with nonstick cooking spray. (If using bundt pan, grease with Crisco, then dust all sides with flour.) Set pan(s) aside.
  2. In stand mixer fitted with paddle attachment, cream butter and brown sugar until well combined. Add eggs and mix until combined.
  3. Add 1 cup of flour, baking powder, and cinnamon; mix until combined. Add 1 cup of applesauce and mix until combined. Add remaining flour and mix until combined. Add remaining applesauce and mix until combined.
  4. Transfer batter to prepared pan(s). Bake 55-60 minutes, or until toothpick inserted in center comes out clean.
  5. For loaves: Cool in pans 10 minutes. Gently lift loaves from pans using parchment folded over sides, remove & discard parchment, and place loaves on wire rack to cool completely.
  6. For bundt pan: Let cake cool completely in pan before inverting onto platter.
  7. Once cooled, dust with powdered sugar before serving, if desired, and cut slices using serrated knife.
  8. Store at room temperature. Cake ages well and becomes more moist with time!

Crock Pot Sloppy Joes

With only four ingredients, this recipe is super simple yet packed with flavor. Better yet, it's comfort food at it's finest!


Crock Pot Sloppy Joes
Yield: 12 servings

Ingredients
  • 3 lbs ground beef (or ground turkey)
  • 1/3 cup brown sugar
  • 1/3 cup yellow mustard
  • 1 1/2 cups ketchup

Directions
  1. Brown ground beef until no longer pink, then add to slow cooker.
  2. Add remaining ingredients to slow cooker and stir to combine.
  3. Cook on low for 3-5 hours. Stir before serving on hamburger buns.

Chocolate Cake Donuts

When your daughter asks to make donuts, how can you say no?! One of the perks of being stuck at home this summer has been the quality time I've spent baking in the kitchen with my kids. It has been fun to make family favorite recipes as well as trying new ones, like this!


Chocolate Cake Donuts
Yield: 1 dozen

Ingredients
Donuts:
  • 1/2 cup packed brown sugar
  • 3 Tbsp coconut oil
  • 1 egg, room temperature
  • 1 tsp vanilla
  • 3/4 cup almond milk
  • 1 1/4 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
Glaze:
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1/4 cup cocoa powder (for chocolate glaze or additional powdered sugar for vanilla glaze)
  • 2-3 Tbsp almond milk (depending on desired consistency)

Directions
  1. Preheat oven to 350°F. Spray donut pan with nonstick cooking spray; set aside.
  2. In stand mixer fitted with paddle attachment, cream brown sugar and coconut oil. Add egg, vanilla, and almond milk. Mix well.
  3. Add flour, cocoa, baking powder, baking soda, and salt. Mix until fully combined.
  4. Spoon batter into large plastic storage bag. Close seal of bag. Cut tip off bag corner. Carefully squeeze bag to fill donut pan.
  5. Bake 10-12 minutes, or until donuts spring back when gently pressed.
  6. In small bowl, whisk together glaze ingredients. Dip each warm donut into glaze and then top with sprinkles. Place on wire rack until ready to serve.
  7. Store in airtight container at room temperature.

Snickerdoodle Cake

Three layers of vanilla cake are studded with crunchy cinnamon streusel and topped with creamy brown sugar cream cheese buttercream frosting. My 6 year old daughter has already decided that this will be the cake she requests for her birthday in October!


Snickerdoodle Cake
Yield: 3 layer cake

** Note: This recipe needs to be made one day in advance! **

Ingredients
Cake:
  • 3 1/4 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/3 cup corn starch
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1 2/3 cups granulated sugar
  • 3 large eggs + 2 additional egg whites, room temperature
  • 1 Tbsp pure vanilla extract
  • 1 1/2 cups buttermilk (or substitute 1.5 Tbsp lemon juice plus enough milk to equal 1.5 cups, stir & let stand 5 minutes)
Streusel: Frosting:
  • 1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature
  • 8 oz block full-fat cream cheese, room temperature
  • 3/4 cup packed light brown sugar
  • 1 Tbsp ground cinnamon
  • 6 cups powdered sugar
  • 1/4 cup milk
  • 1 tsp pure vanilla extract
  • 1/8 tsp salt

Directions
  1. Preheat oven to 350°F. Grease three 9-inch cake pans with nonstick cooking spray, line with parchment paper, then grease parchment paper.
  2. Sift flour, corn starch, salt, baking powder, and baking soda together; set aside.
  3. Using stand mixer fitted with paddle attachment, beat butter and sugar on high speed until smooth and creamy, about 3 minutes. Scrape sides and bottom of bowl as needed.
  4. Beat in 3 eggs, 2 egg whites, and vanilla on high speed until combined, about 2 minutes. (Mixture will look curdled.) Scrape sides and bottom of bowl as needed.
  5. With mixer running on low speed, slowly add dry ingredients. With mixer still running on low speed, slowly pour in buttermilk; mix just until combined. You may need to stir by hand to ensure no lumps remain at bottom of bowl. Batter will be slightly thick. Pour batter evenly into cake pans; set aside while making streusel.
  6. With a fork, mix brown sugar, flour, and cinnamon together until combined. Pour melted butter on top and mix just until combined. Immediately crumble streusel over batter in cake pans; gently pat down with hands.
  7. Bake 23-26 minutes, or until toothpick inserted in center comes out clean. Allow cakes to cool in pans 15 minutes, then turn out from pans, remove & discard parchment paper, and cool completely on wire racks. Cakes must be completely cool before frosting and assembling.
  8. Using stand mixer fitted with whisk attachment, beat butter and cream cheese on medium speed until creamy, about 2 minutes. Add brown sugar and cinnamon; beat on medium-high speed until combined, about 1 minute. Stop mixer and add powdered sugar, milk, vanilla, and salt. Turn mixer on low speed and beat for 30 seconds, then turn mixer up to medium-high speed and beat until completely smooth and creamy. (Scrape sides and bottom of bowl as needed.)
  9. To assemble cake, place one cake layer on platter, spread with 3/4 cup frosting, top with another cake layer, spread with 3/4 cup frosting, and end with final cake layer. Spread remaining frosting over top and sides of cake.
  10. Cover and refrigerate overnight before serving. (This cake ages well!)

French Toast Casserole

Instead of making traditional French toast on the stovetop where you can only cook a few servings at a time, try baking this casserole in the oven so that everyone can sit down at the table together to enjoy brunch at the same time!


French Toast Casserole
Yield: 8x8 pan

Ingredients
For Casserole:
  • 6-8 cups cubed gluten free bread (I used this recipe)
  • 1 1/4 cups almond milk
  • 4 eggs, room temperature
  • 6 Tbsp sugar
  • 1 Tbsp vanilla
  • 1 tsp cinnamon
For Topping:

Directions
  1. Preheat oven to 350°F.
  2. Grease 8x8 baking dish with nonstick cooking spray. Evenly layer bread cubes in prepared dish.
  3. In medium bowl, whisk together almond milk, eggs, sugar, vanilla, and cinnamon. Pour mixture over bread.
  4. In separate bowl, mix together topping ingredients with fork. Crumble over bread.
  5. Bake 30-35 minutes, or until center is set and topping is browned.
  6. Serve hot from the oven topped with maple syrup. Enjoy!

Cinnamon Rhubarb Bread

This super-moist quick bread balances the tartness of rhubarb with the sweetness of brown sugar and is studded with pecans for a nice little crunch. Enjoy a slice for breakfast or as an afternoon snack. It makes a great gift, too!


Cinnamon Rhubarb Bread
Yield: 1 loaf

Ingredients
  • 1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 3/4 cup brown sugar
  • 1/4 cup coconut oil
  • 1/4 cup applesauce (or 2 oz tub of Gerber 1st Foods Prunes)
  • 1/2 Tbsp lemon juice plus enough almond milk to measure 1/2 cup, stir & let stand 5 minutes
  • 1 tsp vanilla
  • 1 egg, room temperature
  • 2 cups diced rhubarb
  • 1/2 cup chopped pecans

Directions
  1. Preheat oven to 350°F. Grease 8x4-inch loaf pan; set aside.
  2. In large bowl, whisk together flour, baking soda, salt, and cinnamon; set aside.
  3. In stand mixer fitted with paddle attachment, cream brown sugar, coconut oil, and applesauce (or prunes). Stir in milk mixture, vanilla, and egg. Add dry ingredients and combine thoroughly.
  4. Fold in rhubarb and pecans.
  5. Pour batter into prepared loaf pan. Bake 50-55 minutes, or until toothpick inserted into center comes out dry.
  6. Cool for 10 minutes and then remove bread from pan to wire rack to cool completely before slicing.

Maple Brown Sugar Oatmeal Muffins

You know those small packets of maple & brown sugar instant oatmeal? Well, these muffins taste just like that hearty bowl of goodness, only in portable breakfast form!


Maple Brown Sugar Oatmeal Muffins
Yield: 18 muffins

Ingredients
Directions
  1. Preheat oven to 400˚F. Line muffin cups with paper liners.
  2. Combine oats and milk in large bowl.
  3. Add maple syrup, oil, maple extract, brown sugar, and eggs. Mix until combined.
  4. Stir in flour, baking powder, cinnamon, baking soda, and salt, just until combined. (Batter will be wet.)
  5. Divide batter evenly between prepared muffin cups. (Use an ice cream scoop to make it easy!)
  6. Bake 15-20 minutes, or until muffins spring back when lightly pressed.
  7. Let muffins cool in pan for 5 minutes, then remove to wire rack to cool completely.
  8. Muffins will keep for 3-4 days in sealed container at room temperature (longer in refrigerator).

Notes
  • To reduce fat, I use a 2 oz tub of Gerber 1st Foods Prunes in place of the oil. My mom taught me this trick, and it's a great way to increase the fiber, too. (Thanks for the tip, Mom!)
  • For added texture, stir raisins, walnuts, and/or chocolate chips into the batter before baking.

Jodie's Toffee

When I was growing up, my mom was a first grade aid one school year and this recipe was given to her by a fellow teacher. (Of course, the original ingredient list included saltine crackers, so I had to do my research to find an equivalent gluten free replacement!) It is my absolute favorite Christmas treat and makes the best homemade gift... everyone raves about it!


Jodie's Toffee
Yield: depends on how large/small you make the pieces!

Ingredients
Directions
  1. Preheat oven to 350°F. Coat 12x17" rimmed cookie sheet with nonstick spray. Line with foil and spray again.
  2. Place crackers side by side on prepared pan. (Break into smaller pieces, if necessary, to cover all the way to the edges.)
  3. On stovetop over medium heat, boil butter and sugar for 5 minutes, stirring constantly. Pour over crackers. Bake for 5 minutes.
  4. Remove pan from oven, sprinkle chocolate (or line up bars) over top. Return to oven for 30-60 seconds to melt chocolate. Remove from oven and spread chocolate with offset spatula. Quickly sprinkle with almonds and pat down to set.
  5. Once pan is cool to touch, place in refrigerator to chill overnight. Break into desired-sized pieces. Enjoy!

Pumpkin Crumb Cake

With fall comes all things pumpkin! So get working on this recipe to bring the aroma of autumn to your kitchen. Your taste buds will thank me later!


Pumpkin Crumb Cake
Yield: 8x8 pan

Ingredients
Crumbs:
 1/2 cup brown sugar
 1/4 cup granulated sugar
 1 Tbsp cinnamon
 1/4 tsp salt
 1 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 1/2 cup (1 stick) butter, melted

Cake:
 1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 3/4 tsp baking soda
 3/4 tsp baking powder
 3 tsp cinnamon
 1/4 tsp salt
 1/2 cup dark brown sugar
 1/4 cup granulated sugar
 1/2 cup (1 stick) butter, softened
 1 egg, room temperature
 1 cup pumpkin puree (can substitute butternut/buttercup squash)
 2 Tbsp almond milk

Glaze (optional, not shown in photo above):
 1 cup powdered sugar
 3 tsp almond milk
 pinch of salt

Directions
1. Preheat oven to 350°F. Grease 8x8 pan with nonstick cooking spray; set aside.
2. Make Crumbs: Mix dry ingredients together, then add butter; stir until combined and set aside.
3. Make Cake: Mix flour, baking soda, baking powder, cinnamon, and salt together in a bowl and set aside. In stand mixer, cream together sugars and butter. Add egg and mix until well blended. Add pumpkin and mix, making sure to scrape sides of bowl to ensure all ingredients are combined equally. Add dry ingredients and then almond milk; stir until combined.
4. Spread cake batter into pan and top with crumbs. Press down gently.
5. Cook 35-45 minutes. Cake is done when top bounces back.
6. While the cake is cooling, mix glaze ingredients together, if using. Drizzle cake with glaze when ready to serve.

Snickerdoodle Apple Bread

Now that it's officially fall, that means two things: apple picking and football!

It has become an annual tradition in our family to take a trip to Country Apple Orchard for a tractor ride out to pick apples. We eat to our heart's content and bring a giant bagful home to pack in school lunches and for baking. The best pairing with apple is cinnamon, of course, so this bread combines the best of both worlds!

And let's not forget to cheer on our favorite NFL team now that the football season is officially underway... Skol Vikings!


Snickerdoodle Apple Bread
Yield: 1 loaf

Ingredients
Bread:
 1/2 tsp salt
 1 1/2 tsp baking powder
 1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 1/2 cup butter, room temperature
 1 cup light brown sugar
 1/4 cup granulated sugar
 1/2 Tbsp cinnamon
 2 eggs, room temperature
 1 Tbsp vanilla
 1/4 cup milk (I use almond milk)
 1 Granny Smith Apple, finely chopped (about 1 cup)
   *can substitute any tart, firm baking apple
   *toss chopped apple with a little lemon juice to prevent browning

Topping:
 2 Tbsp granulated sugar
 1 tsp cinnamon

Directions
1. Preheat oven to 335°F. (I have a convection oven. If using a standard oven, increase temperature to 350°F.)
2. Grease loaf pan with Crisco. Line pan with parchment paper (for easy removal) and spray with nonstick cooking spray (see photo below). Set aside.
3. Whisk together salt, baking powder, and flour. Set aside.
4. In stand mixer with paddle attachment, beat butter, both sugars, and cinnamon for 2 minutes on medium speed, scraping sides as necessary. Add eggs and vanilla. Mix until smooth, again scraping sides as necessary.
5. Turn mixer to low and add in flour mixture and milk in alternating additions, starting and ending with flour. Mix until just combined.
6. Fold in apples and stir until just combined.
7. Mix together sugar and cinnamon for topping.
8. Pour 2/3 batter into prepared pan and sprinkle with 1/2 of topping. Layer with remaining batter and sprinkle with remaining topping.
9. Bake for 50-60 minutes, or until bread is set and toothpick inserted into center comes out clean.
10. Allow to cool in pan for 10 minutes, then lift from pan, remove parchment, and transfer to wire rack to cool completely.
11. Serve warm or at room temperature.
12. Store at room temperature for a few days or in refrigerator for longer.

Magic Cookie Bars

This classic dessert is transformed into a gluten free version of the original recipe by replacing the graham cracker crust with an almond flour base.


Magic Cookie Bars
Yield: 9x13 pan

Ingredients
1 stick of butter, melted
1 1/2 cups almond flour
1/4 cup granulated sugar
1/4 cup brown sugar
1 cup semisweet chocolate chips
1 cup butterscotch chips
1 1/2 cups sweetened shredded coconut
1/2 cup pecan chips
14 oz can sweetened condensed milk

Directions
1. Preheat oven to 350°F. Grease 9x13 pan with nonstick cooking spray.
2. Stir together butter, almond flour, and both sugars until thoroughly combined. Press crust mixture into bottom of prepared pan.
3. Sprinkle chocolate chips over crust in pan, followed by butterscotch chips, coconut, and pecans.
4. Drizzle sweetened condensed milk evenly over top.
5. Bake 20-25 minutes, or until lightly browned on top.
6. Cool completely in pan on wire rack before cutting into bars. Enjoy!

Banana Streusel Coffee Cake

Need a creative way to use up those over-ripe bananas sitting on your kitchen counter? Take a break from your trusty banana bread recipe and give this moist coffee cake a try!

The fluffy, tender layers of banana cake are filled with a sweet cinnamon and brown sugar streusel that is creamy on the inside and crunchy on the outside.


Banana Streusel Coffee Cake
Yield: 7x11 pan

Ingredients
Streusel:
 2/3 cup packed brown sugar
 1 Tbsp cinnamon
 1/2 cup chopped walnuts (optional)

Cake:
 1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 3/4 tsp baking soda
 3/4 tsp baking powder
 1/4 tsp salt
 3/4 cup sugar
 1 stick unsalted butter, softened
 1 egg, room temperature
 1 1/3 cups mashed banana (about 3 large bananas)
 3 Tbsp milk

Directions
1. Preheat oven to 350°F. Grease pan with nonstick cooking spray. Set aside.
2. Stir brown sugar, cinnamon, and walnuts (if using) in small bowl until well blended. Set streusel aside.
3. Sift flour, baking soda, baking powder, and salt in medium bowl.
4. Using electric mixer, cream sugar and butter. Add egg and beat until fluffy. Stir in mashed bananas and milk. Add dry ingredients and blend well.
5. Spread half of batter in prepared pan. Sprinkle with half of streusel. Repeat with remaining batter and streusel.
6. Bake 35-40 minutes, or until toothpick inserted into center comes out clean. Cool in pan on wire rack.
7. Cut into bars when ready to serve. Tastes great warm from the oven or at room temperature. Enjoy!

Cheesecake Snickerdoodle Blondies

This recipe is dessert perfection: the soft, chewy, cinnamon-sugariness of a snickerdoodle cookie combined with the rich, creamy, sweetness of a slice of cheesecake... all in one delicious treat!


Cheesecake Snickerdoodle Blondies
Yield: 9x13 pan

Ingredients
Cheesecake Layer:
 2 (8 oz) blocks of cream cheese, softened
 1/2 cup granulated sugar
 2 eggs, room temperature
 1 tsp vanilla extract

Snickerdoodle Layer:
 2 1/4 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 1 1/2 tsp ground cinnamon
 1/2 tsp baking soda
 1 tsp salt
 3/4 cup butter, softened
 1 cup granulated sugar
 1/2 cup packed brown sugar
 2 eggs, room temperature
 1 tsp vanilla extract

Cinnamon Sugar:
 2 Tbsp granulated sugar
 1 tsp cinnamon

Directions
1. Preheat oven to 350°F. Grease 9x13 pan with nonstick cooking spray.
2. Prepare Cheesecake Layer: In stand mixer with whisk attachment, beat together cream cheese and sugar until fluffy. Add eggs and vanilla; mix until combined. Set aside.
3. Prepare Snickerdoodle Layer: In medium bowl, mix together flour, cinnamon, baking soda, and salt; set aside. In stand mixer with paddle attachment, beat butter, sugar, and brown sugar until fluffy. Add eggs and vanilla; mix until combined. Add in flour mixture; stir just until combined.
4. Prepare Cinnamon Sugar: In small bowl, mix together sugar and cinnamon until evenly distributed.
5. Assemble Bars: Spread 2/3 of Snickerdoodle dough into prepared pan. Sprinkle with half of Cinnamon Sugar mixture. Pour Cheesecake mixture over the top and smooth with a spatula. Add remaining Snickerdoodle dough to the cheesecake layer by breaking it up into small pieces and placing on top of the cheesecake layer. Sprinkle with remaining cinnamon sugar.
6. Bake for 30-40 minutes, or until center is just slightly jiggly and edges are set.
7. Cool completely in pan on wire rack. Once at room temperature, cover and store in refrigerator overnight before serving.
8. Slice into bars and enjoy!

Rhubarb Upside-Down Cake

I first made this recipe when my husband and I were in the early dating phase of our relationship. In just a few weeks, we will be celebrating our 10 year wedding anniversary, so this recipe has been with us as a couple for a long time! It's the perfect way to use up the bountiful rhubarb crop from your home-grown garden.

Rhubarb Upside-Down Cake
Yield: 8x8 pan

Ingredients
2/3 cup boiling water
1/2 cup Bob's Red Mill Gluten Free Quick Cooking Oats

2 Tbsp butter, melted
1/3 cup granulated sugar
2 cups diced rhubarb

1 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/4 tsp salt

2/3 cup granulated sugar
1/2 cup packed brown sugar
1/4 cup vegetable oil (I substitute one 2.5 oz tub of baby prunes)
1 egg, room temperature

Directions
1. In medium bowl, pour boiling water over oats; cover and let stand about 20 minutes.
2. Meanwhile, preheat oven to 350°F. Grease 8x8 pan with nonstick cooking spray. Combine melted butter and sugar; spread in bottom of greased pan. Sprinkle diced rhubarb over sugar; set aside.
3. In medium bowl, stir together flour, baking powder, baking soda, cinnamon, and salt; set aside.
4. In large mixing bowl, combine 2/3 cup granulated sugar, brown sugar, oil (or prunes), and egg; beat until combined. Add oat mixture and beat well. Add flour mixture to oat mixture, stirring just until combined.
5. Carefully pour cake batter on top of rhubarb in pan, spreading evenly to edges. Bake 45-50 minutes, or until toothpick inserted near center comes out clean.
6. Cool on wire rack for 5 minutes. Run knife along sides of pan to loosen cake; invert onto platter. Serve warm.

Chocolate Banana Muffins

My kids love to eat muffins! And I'm happy to make them. :)


Chocolate Banana Muffins
Yield: 16-18 muffins

Ingredients
1 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1 Tbsp cornstarch
1/2 tsp baking soda
1/4 tsp salt
1/2 cup miniature semisweet chocolate chips
1/2 cup regular semisweet (or milk) chocolate chips
4 Tbsp cocoa powder
1 egg, room temperature
1/2 cup sour cream
1/4 cup melted coconut oil (can substitute vegetable oil)
1 tsp vanilla extract
1/2 cup brown sugar, lightly packed
1 cup mashed ripe bananas (2-3 bananas)

Directions
1. Preheat oven to 350°F. Generously coat muffin tin(s) with nonstick cooking spray; set aside. (These muffins stick to paper liners, so it is not recommended to use them.)
2. In small bowl, stir together flour, cornstarch, baking soda, salt, cocoa powder, and both types of chocolate chips.
3. In another bowl, briskly whisk together egg and sour cream. Stir in melted coconut oil (slightly cooled but measured in its melted state), vanilla extract, brown sugar, and mashed bananas.
4. Combine wet and dry ingredients; stir until JUST combined. Over-mixing results in denser muffins.
5. Divide batter evenly among prepared muffin cups. Bake for 17-23 minutes, or until toothpick inserted in center comes out clean.
6. Allow to cool in pans for 5-10 minutes. Then remove muffins from pan(s) to wire rack to cool completely. (Use butter knife to gently lift each muffin out.)
7. Store in airtight container in refrigerator.
8. When ready to eat, microwave muffin for 15-20 seconds. Spread with Nutella or peanut butter, if desired, and enjoy!

Mocha Layer Cake

My middle daughter turned 7 last week and requested a chocolate cake to celebrate her birthday. This recipe is one that I've made many times before, so we dressed it up with some store-bought decorative frosting (gluten free, of course!) to make it extra special.


Mocha Layer Cake
Yield: 3-layer cake

Ingredients
Cake:
 1 cup butter, softened
 3 cups packed brown sugar
 4 eggs, room temperature
 3 tsp vanilla
 3 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 3/4 cup baking cocoa
 3 tsp baking soda
 1/2 tsp salt
 1 1/2 cups brewed coffee, cooled
 1 1/3 cups sour cream

Frosting:
 2 (8 oz) packages cream cheese, softened
 1/2 cup butter, softened
 8 (1 oz) squares unsweetened chocolate, melted and cooled slightly
 1/2 cup brewed coffee, cooled
 3 tsp vanilla
 7 cups powdered sugar

Directions
1. Arrange oven racks so that pans will fit on two levels. (You will need to cook two pans on center rack and one pan on top rack.) Preheat oven to 350°F. Coat three 9" cake pans with nonstick cooking spray, line bottom of pans with wax (or parchment) paper, and spray again; set pans aside.
2. In large mixing bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla.
3. Combine flour, cocoa, baking soda, and salt; add to creamed mixture alternately with coffee and sour cream, beating well after each addition.
4. Pour into prepared pans. Bake 30-35 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes before removing from pans (be sure to discard wax/parchment paper) to wire racks to cool completely.
5. In large mixing bowl, beat cream cheese and butter until fluffy. Beat in chocolate, coffee, and vanilla until blended. Gradually beat in powdered sugar. Spread between layers and over top and sides of cake.
6. Cover and refrigerate overnight before serving. (Frosting needs time to set up.)

Note: This recipe needs to be made one day in advance!

Chocolate Chip Muffins

When you wake up to a blizzard raging outside in the middle of April, what better way to start the day than with a batch of homemade muffins fresh from the oven! The best part about this recipe is the crunchy, sugary topping, so be sure to eat the muffins while they are still warm... I bet you'll be going back for seconds!


Chocolate Chip Muffins
Yield: 12 muffins

Ingredients
Muffins:
 2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 1/2 cup white sugar
 3 tsp baking powder
 1/4 tsp salt
 3/4 cup milk (I use almond milk)
 1/3 cup vegetable oil
 1 egg, room temperature
 3/4 cup mini semisweet chocolate chips

Topping:
 3 Tbsp white sugar
 2 Tbsp brown sugar

Directions
1. Preheat oven to 375°F. Line muffin pan(s) with paper liners.
2. In medium bowl, combine flour, sugar, baking powder, and salt; mix well.
3. In small bowl, combine milk, oil, and egg; blend well.
4. Add wet ingredients to dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy).
5. Fold in chocolate chips.
6. Divide batter among 12 muffin cups, filling about 2/3 full. (I use an ice cream scoop to make them even.)
7. Combine topping ingredients in small bowl; mix well. Sprinkle over tops of batter; pat down gently with fingers.
8. Bake 15-20 minutes, or until toothpick inserted in center comes out clean. Cool a few minutes in pan before removing to wire rack.
9. Serve warm. Enjoy!

Chickpea Flour Banana Bread

I know what you're thinking... another banana bread recipe?! If you take a look around my blog, you're sure to find variations of this classic quick bread, but this version is something different to add to your rotation.

Chickpea flour has a faintly nutty flavor when baked, which enhances the natural, tropical sweetness of the ripe bananas. Complement these two main ingredients by selecting your fat and sweetener of choice. For added texture, choose one (or both!) of the optional mix-ins: pecans or chocolate chips. This recipe is very versatile depending on what you have available in your pantry!


Chickpea Flour Banana Bread
Yield: 1 loaf

Ingredients
1 1/2 cups chickpea flour
1 Tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
2 eggs, room temperature
1 1/2 cups mashed very ripe bananas (about 3 large bananas)
3 Tbsp brown sugar
2 Tbsp melted virgin coconut oil
2 tsp vanilla

Directions
1. Preheat oven to 335°F. (I have a convection oven. If using a standard oven, increase temperature to 350°F.)
2. Grease loaf pan with Crisco.
3. In large bowl, whisk together flour, baking powder, cinnamon, and salt.
4. In medium bowl, combine eggs, bananas, brown sugar, coconut oil, and vanilla until well blended.
5. Add banana mixture to flour mixture and stir until just blended. Spread batter evenly in prepared pan.
6. Bake 35-40 minutes, until top is golden brown and toothpick inserted in center comes out clean.
7. Let bread cool in pan on wire rack for 10 minutes. Then remove bread from pan and transfer to rack to cool completely.

Notes
• Fat: Coconut oil can be replaced with vegetable oil, melted butter, or ghee.
• Sweetener: Brown sugar can be replaced with honey, maple syrup, or coconut sugar.
• Banana Nut Bread: Add 1/2 cup pecan chips (as seen in photo).
• Chocolate Chip Banana Bread: Omit cinnamon and add 1/2 cup miniature semisweet chocolate chips.
• Banana Muffins: Divide batter among 18 greased muffin cups and bake 10-15 minutes.
• Storage: Store cooled bread, wrapped in foil or plastic wrap, in refrigerator for up to 5 days. Alternatively, wrap bread in plastic wrap and then foil, completely enclosing loaf, and freeze up to 3 months. Let thaw at room temperature for 4-6 hours before serving.

Double Chocolate Chickpea Flour Cookies

Chickpea flour (also known as garbanzo bean flour) is a nutritional powerhouse when it comes to alternative flours for gluten free baking. Not only is it loaded with protein and high in dietary fiber, but chickpea flour is also a good source of iron.

These rich, chocolate cookies are soft and cake-like in the middle with a crisp and chewy edge around the outside. While these cookies might seem like a bit of an indulgence, just remember they offer a host of health-promoting qualities!


Double Chocolate Chickpea Flour Cookies
Yield: 2 dozen

Ingredients
1 cup chickpea flour
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1 egg, room temperature
1/2 cup coconut oil, melted
3/4 cup packed brown sugar
2 tsp vanilla
1 tsp instant espresso powder (optional)
1 cup semisweet (or bittersweet) chocolate chips

Directions
1. Preheat oven to 350°F. Line cookie sheet with parchment paper.
2. In medium bowl, whisk together chickpea flour, cocoa powder, baking soda, and salt.
3. In large bowl, whisk together egg, coconut oil, brown sugar, vanilla, and espresso powder, if using, until blended. Add flour mixture, stirring until well combined. Fold in chocolate chips.
4. Roll dough into 1-inch balls. (I used small cookie dough scoop.) Space 2 inches apart on prepared sheet and flatten slightly.
5. Bake 8-10 minutes until edges are set (centers may still look slightly soft). Let cool on sheet for 1 minute, then transfer to wire rack and cool completely.

Herbed Chicken

If you have children (or a picky spouse!), you know how challenging it can be to find a meal that everyone at the table will eat. So I was fairly pessimistic when I first tried this recipe a few years ago figuring at least one of my kids would dislike it (I already had one of them in mind!). Boy was I wrong! Not only did Jared and I love this dish as adults, but all three of my children ate it without a fight (win!). This recipe is a staple in our rotation of dinners and hopefully you can add it to your repertoire, too!


Herbed Chicken
Crock Pot Recipe

Ingredients
4 boneless, skinless chicken breasts (about 2 lbs, fresh or frozen)
10.5 oz can gluten free cream of chicken soup (see note below)
1/4 cup gluten free soy sauce
1/4 cup vegetable oil
1/4 cup white wine vinegar
1/4 cup water
1/2 tsp minced garlic
1 tsp ground ginger
1/2 tsp dried oregano
1 Tbsp brown sugar

Directions
1. Arrange chicken in slow cooker.
2. Layer remaining ingredients on top of chicken.
3. Cover. Cook on low 6-8 hours.
4. Shred chicken with two forks and stir to coat in sauce.
5. Serve over cooked rice with a side of steamed broccoli.

Note
If you've checked out my Green Bean Casserole post, then you may recall that I was pleasantly surprised (okay, shocked) the day that I discovered Walmart's Great Value brand made gluten free cream of mushroom soup. I thought I was forever doomed to have to throw out all of my recipes that called for a can of condensed cream-of-whatever soup! Well color me surprised when I went to a different Walmart in town (I think we have at least 6 locations scattered around Sioux Falls) and I discovered gluten free cream of chicken soup! (I may have bought every can on the shelf... literally.)
