Applesauce Bread {Bundt Cake}

Get ready for your house to smell amazing as the sweet aroma of apples, brown sugar, and cinnamon fills the air! This versatile recipe can be made as either a bundt cake or two loaves of bread. You can easily cut the recipe in half to make just a single loaf. I love having options!


Applesauce Bread {Bundt Cake}
Yield: 2 loaves (or 1 bundt cake)

Ingredients

Directions
  1. Preheat oven to 350°F. Grease 2 loaf pans with Crisco, line with parchment (fold extra over sides for easy removal after baking), then grease with nonstick cooking spray. (If using bundt pan, grease with Crisco, then dust all sides with flour.) Set pan(s) aside.
  2. In stand mixer fitted with paddle attachment, cream butter and brown sugar until well combined. Add eggs and mix until combined.
  3. Add 1 cup of flour, baking powder, and cinnamon; mix until combined. Add 1 cup of applesauce and mix until combined. Add remaining flour and mix until combined. Add remaining applesauce and mix until combined.
  4. Transfer batter to prepared pan(s). Bake 55-60 minutes, or until toothpick inserted in center comes out clean.
  5. For loaves: Cool in pans 10 minutes. Gently lift loaves from pans using parchment folded over sides, remove & discard parchment, and place loaves on wire rack to cool completely.
  6. For bundt pan: Let cake cool completely in pan before inverting onto platter.
  7. Once cooled, dust with powdered sugar before serving, if desired, and cut slices using serrated knife.
  8. Store at room temperature. Cake ages well and becomes more moist with time!

Applesauce Muffins

These soft and tender muffins highlight two of my favorite aromas and flavors of fall: apples and cinnamon. These muffins are sure to make their way into your standard breakfast rotation, not only during autumn, but year-round!


Applesauce Muffins
Yield: 12 muffins

Note: Muffins need to be made one day in advance.

Ingredients

Directions
  1. Preheat oven to 350°F. Line muffin pan with paper liners.
  2. Whisk all liquid ingredients together.
  3. In separate bowl, stir remaining dry ingredients together.
  4. Pour dry mixture into wet mixture, and stir until just evenly mixed.
  5. Fill paper liners 3/4 full with batter.
  6. Bake on center rack for 17-20 minutes, or until muffins have domed and toothpick inserted into center comes out mostly clean.
  7. Let cool in pan for 5-10 minutes, then remove muffins from pan and place on wire rack to cool completely.

Note: Do NOT eat the muffins the same day you make them! The muffins really stick to the liners if you try to peel them off the first day. Store them in an airtight container overnight and the liners peel off more easily the next day. The flavor and texture become even better, too!

Classic Italian Tomato Sauce

This authentic marinara sauce is full of rich tomato flavor and savory Italian spices.


Classic Italian Tomato Sauce
Yield: 8-10 servings

Ingredients
  • 2-3 Tbsp olive oil
  • 1 medium onion, diced
  • 4 garlic cloves, minced (about 1 Tbsp)
  • 2 (28 oz) cans diced tomatoes
  • 1 (6 oz) can tomato paste
  • 1 Tbsp sugar
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp ground black pepper

Directions
  1. Heat large pot over medium heat. Add oil and then onion. Saute for 10 minutes, or until softened. Add garlic and cook for 1-2 minutes longer.
  2. Add diced tomatoes, tomato paste, sugar, basil, oregano, salt, and pepper; stir to combine.
  3. Reduce heat to medium-low and simmer for at least 20-30 minutes. If time permits, simmer on low for 1-2 hours, stirring occasionally, to allow sauce to thicken and flavors to develop.
  4. Serve sauce over pasta.

Sweet & Spicy Cashews

Now that we're heading into the cooler months, the sweet heat of these cashews makes for the perfect snack to warm you up!


Sweet & Spicy Cashews
Yield: 4 cups

Ingredients
  • 1/2 cup honey
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 4 cups raw cashew nuts
  • 1/4 cup coconut sugar
  • 1 tsp salt

Directions
  1. Preheat oven to 325°F. Line two baking sheets with parchment paper.
  2. Stir together coconut sugar and salt; set aside.
  3. Stir together honey, chili powder, paprika, and cayenne pepper. Add cashews and toss to coat.
  4. Spread cashews in single layer on prepared baking sheet. Roast for 5 minutes, remove pan from oven and stir cashews, then roast an additional 5 minutes.
  5. Transfer cashews to second prepared baking sheet to cool for 3-5 minutes, then toss in sugar-salt mixture. Spread into single layer to continue cooling.
  6. Allow cashews to cool completely before storing in airtight container. (Tip: Line bottom of container with parchment to prevent sticking and use parchment between layers of cashews.)

Pumpkin Spice Truffle Cookies

I actually made these cookies at Thanksgiving, but I've been so busy preparing for Christmas that I haven't had a chance to share this recipe until now! Autumn is the season for pumpkin spice everything, and these cookies embody the aroma and flavor of traditional pumpkin pie with a modern twist. The soft, cake-like texture is studded with tasty truffles for a burst of fall flavor in every bite!


Pumpkin Spice Truffle Cookies
Yield: 3-4 dozen cookies

Ingredients
Directions
  1. Preheat oven to 375°F.
  2. Line cookie sheets with parchment paper; set aside.
  3. In small bowl, combine flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  4. In stand mixer fitted with paddle attachment, beat butter, brown sugar, and vanilla until creamy. Add pumpkin and mix; then add egg and mix. Gradually beat in flour mixture.
  5. Fold in pumpkin spice truffles.
  6. Drop by rounded tablespoon onto prepared baking sheets. (Small cookie dough scoop works well for this step!)
  7. Bake 9-11 minutes, or until edges are golden brown. Cool on baking sheet for 2 minutes before moving to wire rack to cool completely.
  8. Store in airtight container at room temperature for up to a week. (Cookies are moist and will last longer if stored in refrigerator.)

Vegan Pumpkin Spice Muffins

Simply put, this aromatic recipe embodies all things fall, which just so happens to be my favorite season! These tender, fluffy muffins are filled with autumn spices, studded with pecans, and topped with a sweet crunch.


Vegan Pumpkin Spice Muffins
Yield: 15 muffins

Ingredients
  • 1 cup pureed pumpkin (or squash)
  • 1/2 cup almond milk
  • 1/2 cup avocado oil
  • 2 tsp vanilla
  • 1 3/4 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 Tbsp baking powder
  • 2 tsp cinnamon
  • 3/4 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 cup chopped pecans (or walnuts)

Directions
  1. Preheat oven to 375°F.
  2. In stand mixer fitted with paddle attachment, thoroughly mix pumpkin, almond milk, avocado oil, and vanilla.
  3. Add flour, granulated sugar, brown sugar, baking powder, cinnamon, ginger, and salt to wet ingredients. Mix just until combined.
  4. Fold in pecans.
  5. Line muffin tins with paper liners and fill each 2/3 full. Sprinkle 1/2 tsp of brown sugar on top of each muffin.
  6. Bake 16-20 minutes, or until toothpick inserted in center comes out clean. Immediately remove from pans to wire rack.
  7. Serve warm. Spread with plant-based butter and/or drizzle with maple syrup, if desired. Enjoy!

Oven Roasted Carrots

This simple side dish pairs perfectly with any main course and can be customized with your favorite combination of herbs & spices!


Oven Roasted Carrots
Yield: 4-6 servings

Ingredients
  • 2 lbs carrots
  • cooking spray
  • salt (and/or other seasonings)

Directions
  1. Preheat oven to 375°F. Grease rimmed cookie sheet with cooking spray.
  2. Peel carrots and trim ends, then rinse under cool water. Drain carrots on paper towel to remove excess moisture.
  3. Cut carrots in 1/2" thick round discs and arrange in single layer on prepared pan.
  4. Spray carrots with cooking spray and season with salt, to taste.
  5. Bake for 20 minutes, or until fork tender and edges brown slightly.
  6. Serve hot from the oven!

Vegan Pecan Pie Bars

This handheld version of traditional pecan pie is the perfect after-dinner treat at Thanksgiving, or any other fall holiday gathering!


Vegan Pecan Pie Bars
Yield: 8x8 pan

Ingredients
Crust:
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/3 cup pure maple syrup
  • 1/3 cup coconut oil, measured solid & then melted
  • 1 tsp vanilla
  • 1/4 tsp salt
Filling:
  • 1/3 cup coconut oil, measured solid
  • 1/4 cup maple syrup
  • 2/3 cup brown sugar
  • 1 tsp vanilla
  • 1 Tbsp almond milk
  • 2 cups pecans, coarsely chopped

Directions
  1. Preheat oven to 350°F. Grease 8x8 pan with nonstick cooking spray; set aside.
  2. In small bowl, mix together all crust ingredients until well combined. Press into bottom of prepared pan. Bake 15-17 minutes, or until slightly golden brown. Let crust cool while filling is being prepared.
  3. Meanwhile, in small saucepan over medium-high heat, bring coconut oil, maple syrup, brown sugar, and vanilla to a boil, stirring constantly. Once boiling, continue stirring and let bubble for one minute. Remove from heat. Stir in almond milk and pecans. Pour filling over crust and bake 20-22 minutes. Remove pan from oven and place on wire rack.
  4. Let cool completely before cutting into bars.
  5. When ready to serve, top individual bars with dairy free vanilla ice cream and/or coconut whipped cream, if desired. (The bars are also delicious on their own.) Enjoy!

Squash Casserole {Dairy Free}

When I first published this recipe, it was laden with cheese. I altered the ingredients to accommodate my new dietary needs (I explain more here) and transformed this recipe into a deliciously dairy free side dish!


Squash Casserole {Dairy Free}
Yield: about 8 side dish servings

Ingredients
  • 1 lb yellow squash (2-3 medium) - peeled, seeded, chopped
  • 1 large (or 2 small) yellow onion, chopped
  • 1 tsp minced garlic (fresh, not dried)
  • 1/2 cup mayonnaise
  • 2 eggs, room temperature
  • 1/2 cup Daiya cheddar style shreds
  • 1/4 cup nutritional yeast
  • 1/4 tsp salt
  • 1 tsp dried parsley

Directions
  1. Steam squash, onion, and garlic in slow cooker on low for 6-8 hours, or until tender. Drain off excess liquid. Use immersion blender to desired smooth, or chunky, consistency.
  2. Preheat oven to 350°F. Grease casserole dish with nonstick cooking spray; set aside.
  3. Stir mayonnaise into squash mixture. Beat eggs and slowly whisk into squash mixture. Stir in cheddar shreds, nutritional yeast, and salt until evenly distributed.
  4. Pour into greased casserole dish. Sprinkle top with parsley.
  5. Bake 35 minutes, or until top turns golden brown. Serve hot from the oven and enjoy!

Note
  • Zucchini can be used in place of yellow squash, or try a combination of the two! Acorn squash also works well. Really, any savory squash will do!

Stuffed Acorn Squash

If you're looking for a meal that will warm you up both inside and out, you've come to the right place! Cooler weather outside means it's okay to turn your oven on for the afternoon to heat up your house while at the same time taking advantage of that bountiful harvest of squash you grew in your garden over the summer for a hearty, satisfying dinner.


Stuffed Acorn Squash
Yield: 6 servings

Ingredients
  • 3 acorn squash
  • 1 lb mild Italian ground sausage
  • 1 large onion, chopped
  • 1 bell pepper, chopped (any color will work, red used here)
  • 5 cloves garlic, minced
  • 1 cup shredded cheese (any kind you like, Mexican blend used here)

Directions
  1. Preheat oven to 350°F. Line baking sheet with foil.
  2. Cut each acorn squash in half and scoop out seedy inside. Place on baking sheet with inside facing up and skin side facing down. If squash halves won't lie flat, slice off a small piece of squash skin on underside to level it. Pierce inside flesh with fork. Lightly coat squash with nonstick cooking spray and tent with foil. Roast in oven for 80 minutes, until flesh is fork tender.
  3. While squash is roasting, brown sausage on stove top over medium heat. Once sausage is no longer pink, add onion, pepper, and garlic. Cook until vegetables are translucent.
  4. When squash is ready, remove foil tent and discard. Spoon sausage mixture into cavity of each squash half. Sprinkle with cheese. Return to oven for 15 minutes, until cheese is melted and turns golden brown.
  5. Serve warm from the oven. All you need is a spoon!

Casserole Option
  1. Follow steps 1-3 as stated above.
  2. Once squash is tender, scoop flesh into large bowl and use potato masher to reach smooth consistency.
  3. Grease 9x13 pan with nonstick cooking spray. Spoon squash into prepared pan; level with spatula. Spoon sausage mixture on top of squash layer. Sprinkle with cheese.
  4. Cook in 350°F oven for 25-30 minutes, or until cheese is melted and begins to brown.

Caramelized Onion Butternut Squash Soup

Now that winter has officially arrived, it's time to expand my repertoire of soup, stew, and chili recipes because nothing warms you up better than a steaming hot bowl of satisfying comfort food!


Caramelized Onion Butternut Squash Soup
Yield: 6-8 servings

Ingredients
3 Tbsp olive oil
2 medium onions, diced
4 cups cooked butternut squash (or 2 cans pumpkin puree)
32 oz carton vegetable stock
1 tsp sage
1/2 tsp salt
1/2 tsp pepper

Directions
1. In pan over medium heat, saute olive oil and diced onion for about 15 minutes, stirring occasionally. Do not let onions burn. Allow them to slowly brown and then start to caramelize.
2. Add all ingredients to slow cooker and stir to combine.
3. Cook on low for 6-8 hours.
4. Use immersion blender to achieve smooth, creamy consistency.
5. Top individual servings with goat cheese crumbles and sprouted pumpkin seeds.

Pumpkin Crumb Cake

With fall comes all things pumpkin! So get working on this recipe to bring the aroma of autumn to your kitchen. Your taste buds will thank me later!


Pumpkin Crumb Cake
Yield: 8x8 pan

Ingredients
Crumbs:
 1/2 cup brown sugar
 1/4 cup granulated sugar
 1 Tbsp cinnamon
 1/4 tsp salt
 1 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 1/2 cup (1 stick) butter, melted

Cake:
 1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 3/4 tsp baking soda
 3/4 tsp baking powder
 3 tsp cinnamon
 1/4 tsp salt
 1/2 cup dark brown sugar
 1/4 cup granulated sugar
 1/2 cup (1 stick) butter, softened
 1 egg, room temperature
 1 cup pumpkin puree (can substitute butternut/buttercup squash)
 2 Tbsp almond milk

Glaze (optional, not shown in photo above):
 1 cup powdered sugar
 3 tsp almond milk
 pinch of salt

Directions
1. Preheat oven to 350°F. Grease 8x8 pan with nonstick cooking spray; set aside.
2. Make Crumbs: Mix dry ingredients together, then add butter; stir until combined and set aside.
3. Make Cake: Mix flour, baking soda, baking powder, cinnamon, and salt together in a bowl and set aside. In stand mixer, cream together sugars and butter. Add egg and mix until well blended. Add pumpkin and mix, making sure to scrape sides of bowl to ensure all ingredients are combined equally. Add dry ingredients and then almond milk; stir until combined.
4. Spread cake batter into pan and top with crumbs. Press down gently.
5. Cook 35-45 minutes. Cake is done when top bounces back.
6. While the cake is cooling, mix glaze ingredients together, if using. Drizzle cake with glaze when ready to serve.

Snickerdoodle Apple Bread

Now that it's officially fall, that means two things: apple picking and football!

It has become an annual tradition in our family to take a trip to Country Apple Orchard for a tractor ride out to pick apples. We eat to our heart's content and bring a giant bagful home to pack in school lunches and for baking. The best pairing with apple is cinnamon, of course, so this bread combines the best of both worlds!

And let's not forget to cheer on our favorite NFL team now that the football season is officially underway... Skol Vikings!


Snickerdoodle Apple Bread
Yield: 1 loaf

Ingredients
Bread:
 1/2 tsp salt
 1 1/2 tsp baking powder
 1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 1/2 cup butter, room temperature
 1 cup light brown sugar
 1/4 cup granulated sugar
 1/2 Tbsp cinnamon
 2 eggs, room temperature
 1 Tbsp vanilla
 1/4 cup milk (I use almond milk)
 1 Granny Smith Apple, finely chopped (about 1 cup)
   *can substitute any tart, firm baking apple
   *toss chopped apple with a little lemon juice to prevent browning

Topping:
 2 Tbsp granulated sugar
 1 tsp cinnamon

Directions
1. Preheat oven to 335°F. (I have a convection oven. If using a standard oven, increase temperature to 350°F.)
2. Grease loaf pan with Crisco. Line pan with parchment paper (for easy removal) and spray with nonstick cooking spray (see photo below). Set aside.
3. Whisk together salt, baking powder, and flour. Set aside.
4. In stand mixer with paddle attachment, beat butter, both sugars, and cinnamon for 2 minutes on medium speed, scraping sides as necessary. Add eggs and vanilla. Mix until smooth, again scraping sides as necessary.
5. Turn mixer to low and add in flour mixture and milk in alternating additions, starting and ending with flour. Mix until just combined.
6. Fold in apples and stir until just combined.
7. Mix together sugar and cinnamon for topping.
8. Pour 2/3 batter into prepared pan and sprinkle with 1/2 of topping. Layer with remaining batter and sprinkle with remaining topping.
9. Bake for 50-60 minutes, or until bread is set and toothpick inserted into center comes out clean.
10. Allow to cool in pan for 10 minutes, then lift from pan, remove parchment, and transfer to wire rack to cool completely.
11. Serve warm or at room temperature.
12. Store at room temperature for a few days or in refrigerator for longer.

Lentil Chili

Incorporating meatless meals into your week is a great way to keep costs down when switching to a gluten free diet. I recently discovered a love for lentils and while this recipe piqued my interest, I realized I had no patience for standing by the stove to make it when the weather has finally gotten nice here in South Dakota. (Read: I wanted to be outside!) So I decided to just dump all the ingredients into my crock pot and hope for the best. Result? SUCCESS!


Lentil Chili
Crock Pot Recipe

Ingredients
  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 5 cloves garlic, minced
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 2 cups gluten free lentils
  • 2 (32 oz) cartons vegetable stock
  • 1 (28 oz) can crushed tomatoes with liquid
  • 1 (6 oz) can tomato paste

Directions
  1. Sauté onion and pepper in olive oil over medium heat until tender.
  2. Combine all ingredients in slow cooker; stir well.
  3. Cook on low 8-10 hours.
  4. Stir well before serving.

Serving Suggestion
  • Top individual servings with shredded cheese, sour cream, guacamole, black olives, green onion, etc.
  • Scoop with tortilla chips.

Caramel Apple Bars

With two apple trees on our property, I have an abundance of fruit to cook with year round! During the summer and fall, when apples are in season, I bake with fruit picked fresh off the tree. Since we always end up with more apples than we can use right away, I peel, chop, and store the extra fruit in our freezer to bake with during the winter and spring when our trees are dormant (like I did today in the middle of March!).


Caramel Apple Bars
Yield: 9x13 pan

Ingredients
Crust:
 1/2 cup butter, softened
 1/4 cup shortening
 1 cup packed brown sugar
 1 3/4 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 1 cup Bob's Red Mill Gluten Free Quick Cooking Oats
 1 tsp salt
 1/2 tsp baking soda

Filling:
 4 1/2 cups chopped peeled tart apples
 3 Tbsp Bob's Red Mill Gluten Free 1-to-1 Baking Flour
 11-oz package caramel bits plus 1/2 cup from another 11-oz package
 3 Tbsp butter

Directions
1. Preheat oven to 375°F. Grease 9x13 pan with nonstick cooking spray; set aside.
2. In large bowl, cream butter, shortening, and brown sugar until light and fluffy. Add flour, oats, salt, and baking soda; mix well. Set aside 2 cups. Press remaining oat mixture into prepared pan.
3. For filling, toss apples with flour; spoon over crust. In saucepan, melt caramels and butter over low heat; drizzle over apples. Top with reserved oat mixture.
4. Bake for 25-30 minutes, or until lightly browned. Cool before cutting into bars.

Serving Suggestion: These bars taste delicious warmed up in the microwave with a scoop of vanilla ice cream on top!

Squash Casserole

I first started making this dish when my in-laws had an over-abundance of yellow squash in their garden one year, and I needed to figure out a way to use up all those veggies besides just slicing them and eating them raw (with dip, of course!). It's now become a staple at our house, and I purposely buy yellow squash just to make it!

Here's a look at the "finished" product (prior to baking), all assembled and ready to go into the oven.


Good thing I took the above photo, because as soon as the casserole came out of the oven, my family was ready to eat dinner! I served it alongside pork tenderloin and carrots cooked in a separate crock pot. Here's a look at what was leftover.


Squash Casserole
Yield: about 8 side dish servings

Ingredients
Main Dish:
  • 1 lb yellow squash (2-3 medium) - peeled, seeded, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1/2 cup mayonnaise
  • 1 cup shredded cheese
  • 1 egg, room temperature
  • seasoning to taste (salt, pepper, Captain Mike’s, etc.)
Topping:
  • 1/4 cup shredded cheese
  • 2 Tbsp Kraft Parmesan cheese (we call it shaky cheese at our house!)
  • 1 tsp dried parsley

Directions
  1. Steam squash, onion, and garlic in slow cooker on low for 6-8 hours, or until tender. Drain off excess liquid. Use immersion blender, leaving smooth or chunky texture, to taste. Beat egg and slowly whisk into veggies (important so it won't cook!). Mix in additional ingredients.
  2. Pour into greased casserole dish. Top with additional cheeses and parsley.
  3. Bake at 350°F for 40 minutes, or until cheese on top turns golden brown. Serve hot from the oven and enjoy!

Notes
  • Zucchini can be used in place of yellow squash, or try a combination of the two! Acorn squash also works well. Really, any savory squash will do!
  • I use a four cheese Mexican blend because it melts nicely. Colby Jack or any other soft cheese blend would work well, too.
