Monster Cookies

My daughter has started to become more adventurous in the kitchen, so this is actually one of the recipes that *she* made and not me! Her brother (my son) loves monster cookies, and these were a big hit! Feel free to change up the mix-ins to use whichever ingredients you have on hand... this recipe is great for finishing up those last odds and ends that may be sitting in your pantry.

Monster Cookies
Yield: 19 large cookies

Ingredients
Directions
  1. Sift together the flour, baking soda, baking powder, and salt in a medium bowl, and set aside.
  2. In a stand mixer fitted with paddle attachment, cream butter, brown sugar, and white sugar. Add vanilla, peanut butter, and eggs, and mix well.
  3. Stir in the dry ingredients and mix until combined. Add the oats, mini chocolate chips, and mini M&M'S.
  4. Preheat the oven to 350°F. Line two cookie sheets with parchment paper. Let the cookie dough rest for 10 minutes before scooping.
  5. Scoop the cookie dough using a large cookie scoop. Line 6 cookie dough balls per cookie sheet. Bake for 12-14 minutes.
  6. Cool for 4 minutes on the hot sheet before transferring to a cooling rack.

Chocolate Pudding Cookies

Here is the traditional chocolate counterpart to the white chocolate pudding cookies in the previous post!

Chocolate Pudding Cookies
Yield: 3 dozen

Ingredients
  • 1 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/3 cup granulated white sugar
  • 2 large eggs, room temperature
  • 2 1/4 tsp vanilla extract
  • 2 1/3 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 box (3.9 ounce) instant chocolate pudding mix
  • 3 Tbsp unsweetened cocoa powder
  • 1 1/4 tsp baking soda
  • 1/2 tsp salt
  • 3 cups semisweet chocolate chips

Directions
  1. Preheat oven to 350°F.
  2. Beat butter and sugars in large mixer bowl until creamy.
  3. Add eggs, one at a time, beating well after each addition.
  4. Stir in vanilla.
  5. Beat in flour, pudding mix, cocoa powder, baking soda, and salt.
  6. Stir in chocolate chips.
  7. Drop by rounded tablespoon on baking sheet lined with parchment paper or silicone mat. (This allows for easier removal from pan after cooling. You can reuse the same parchment between batches to cut down on waste.)
  8. Slightly flatten cookies to even layer for more even cooking. Make sure edges stay rounded!
  9. Bake 8 minutes, or until golden brown. Cool on baking sheet for 2-3 minutes. Remove to wire rack to cool completely.
  10. For best results, bake one pan at a time in center of oven.

White Chocolate Chip Pudding Cookies

I know that it has been more than a hot minute since I've added a new recipe to my blog. Between moving across the country and going back to work full time, I have been rather busy the past couple of years! Rather than experimenting with new recipes, I've been making my family's tried and true favorites.

With my kids home for the summer, they eat through cookies rather quickly and I wanted to switch things up from my usual triple chocolate chip recipe. These pudding cookies stay super moist for days after baking... I have a feeling these will become a part of our usual rotation!

White Chocolate Chip Pudding Cookies
Yield: 3 dozen

Ingredients
  • 1 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 1/4 cup granulated white sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 box (3.4 ounces) instant white chocolate pudding mix
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 package (11 ounces) white chocolate chips

  5. Beat in flour, pudding mix, baking soda, and salt.

Snickerdoodles

My middle daughter has been learning about fractions in math class, so her teacher tasked the students with preparing a recipe in the kitchen (with adult supervision, of course!) to reinforce the concepts they learned throughout third grade. What a fun, and delicious, way to end the school year!


Snickerdoodles
Yield: 6 dozen

Ingredients
For Cookies: For Rolling:
  • 3 Tbsp sugar
  • 3 tsp cinnamon

Directions
  1. Preheat oven to 350°F. Line baking sheets with parchment paper or silpat baking mats; set aside.
  2. In stand mixer fitted with paddle attachment, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well.
  3. Stir in flour, cream of tartar, baking soda, and salt; mix just until combined.
  4. In small bowl, stir together sugar and cinnamon for rolling.
  5. Roll dough into balls the size of small walnuts (about 1/2 Tbsp). Roll in cinnamon sugar mixture until evenly coated. Place 2" apart on prepared baking sheets.
  6. Cook 8 minutes. (Cookies puff up at first, then flatten out.)
  7. Cool 2 minutes before removing to wire rack to cool completely.
  8. Store in airtight container at room temperature.

Cake Batter Cookies

These soft, chewy cookies are simply the portable form of this delicious Funfetti Sugar Cookie Cake! Personalize the recipe with your choice of sprinkle colors to celebrate birthdays, holidays, sports teams, or school mascots. This is also a fun recipe for kids to help with in the kitchen!


Cake Batter Cookies
Yield: 3 dozen

Ingredients
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs, room temperature
  • 2 tsp vanilla
  • 2 1/3 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/4 cup sprinkles (jimmies, not nonpareils)


Directions
  1. Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
  2. In stand mixer fitted with paddle attachment, beat butter and sugar until creamy. Add eggs and vanilla; mix until combined.
  3. Add flour, baking powder, baking soda, and salt; mix until combined.
  4. Fold in white chocolate chips and sprinkles until evenly distributed.
  5. Use small cookie dough scoop and roll dough between hands before placing 2-3 inches apart on prepared baking sheets.
  6. Bake 9 minutes, or until edges are set and dough is no longer shiny. (Cookies will brown just slightly.)
  7. Cool on baking sheets 3 minutes, then remove from pan to wire rack to cool completely.

White Chip Chocolate Cookies {Bars}

Like many families, I try to maximize every dollar in my grocery budget. To minimize the financial impact of my need to be dairy free on top of gluten free, I have started making small batches of DF/GF desserts just for me while continuing to make regular GF baked goods for my family. An easy way to do this has been to cut cookie recipes in half and bake them as bars. I have included both versions below!


White Chip Chocolate Cookie Bars
Yield: 8x8 pan

Ingredients
  • 1 cup plus 2 Tbsp Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/3 cup cocoa
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/2 cup (1 stick) butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 tsp vanilla
  • 1 egg, room temperature
  • 1 cup white chocolate chips

Directions
  1. Preheat oven to 350°F. Grease 8x8 pan with nonstick cooking spray; set aside.
  2. Combine flour, cocoa, baking soda, and salt in small bowl.
  3. Beat butter, sugars, and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually stir in flour mixture. Fold in white chocolate chips.
  4. Dump dough into prepared pan and flatten into even layer.
  5. Bake 20-25 minutes, or until center is set.
  6. Cool completely before cutting into bars.


Dairy Free Option
  • Country Crock has a new line of plant based butters that are both dairy free and gluten free. I used the avocado sticks in this recipe, and they work just like real butter!
  • Nestle Tollhouse has a line of "Simply Delicious" baking morsels that are free from the 8 major food allergens. It's the first company I've seen that offers dairy free white morsels in-store!
  • Both of these products were purchased from Walmart, so you don't have to visit any specialty shops to make this recipe; you can simply pick up these ingredients during your regular shopping trip!

  • 2 1/4 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 2/3 cup baking cocoa
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup (2 sticks) butter, softened
  • 3/4 cup granulated sugar
  • 2/3 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 2 cups white chocolate chips

Directions
  1. Preheat oven to 350°F.
  2. Combine flour, cocoa, baking soda, and salt in small bowl.
  3. Beat butter, sugars, and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually stir in flour mixture. Fold in white chocolate chips.
  4. Drop by rounded tablespoon on baking sheet lined with parchment paper. (This allows for easier removal from pan after cooling. You can reuse the same parchment between batches to cut down on waste!)
  5. Bake 9-11 minutes, or until centers are set. Cool on baking sheet 2 minutes before removing to wire rack.

Pumpkin Spice Truffle Cookies

I actually made these cookies at Thanksgiving, but I've been so busy preparing for Christmas that I haven't had a chance to share this recipe until now! Autumn is the season for pumpkin spice everything, and these cookies embody the aroma and flavor of traditional pumpkin pie with a modern twist. The soft, cake-like texture is studded with tasty truffles for a burst of fall flavor in every bite!


Pumpkin Spice Truffle Cookies
Yield: 3-4 dozen cookies

Ingredients
Directions
  1. Preheat oven to 375°F.
  2. Line cookie sheets with parchment paper; set aside.
  3. In small bowl, combine flour, baking soda, salt, cinnamon, and nutmeg; set aside.
  4. In stand mixer fitted with paddle attachment, beat butter, brown sugar, and vanilla until creamy. Add pumpkin and mix; then add egg and mix. Gradually beat in flour mixture.
  5. Fold in pumpkin spice truffles.
  6. Drop by rounded tablespoon onto prepared baking sheets. (Small cookie dough scoop works well for this step!)
  7. Bake 9-11 minutes, or until edges are golden brown. Cool on baking sheet for 2 minutes before moving to wire rack to cool completely.
  8. Store in airtight container at room temperature for up to a week. (Cookies are moist and will last longer if stored in refrigerator.)

Double Peanut Butter & Milk Chocolate Cookies

Light and fluffy, soft and chewy... the winning cookie combination!


Double Peanut Butter & Milk Chocolate Cookies
Yield: 3 1/2 dozen

Ingredients
*Can substitute 1 cup milk chocolate chips and 2/3 cup peanut butter chips.

Directions
  1. Preheat oven to 375°F.
  2. In small bowl, combine flour, baking soda, and salt.
  3. In stand mixer fitted with paddle attachment, beat butter, peanut butter, granulated sugar, and brown sugar until creamy. Beat in vanilla and eggs.
  4. Gradually stir in flour mixture.
  5. Fold in milk chocolate and peanut butter morsels.
  6. Drop onto ungreased baking sheets using small cookie dough scoop.
  7. Bake 8-9 minutes, or until edges are set but centers are still soft. (Cookies will brown just slightly.)
  8. Cool on baking sheets 4 minutes, then remove to wire rack to cool completely.

Oatmeal Cranberry White Chocolate Chip Cookies

My husband had a potluck at work this week, and when I went to look for this recipe, I realized I haven't made these cookies since I started my blog! This is one of those tried and true recipes that stands the test of time. The cookies are hearty from the oatmeal with a hint of sweetness from the white chocolate that perfectly balances the tartness of the cranberries. The pop of color makes them perfect for the Christmas holidays!


Oatmeal Cranberry White Chocolate Chip Cookies
Yield: 2 1/2 dozen

Ingredients

Directions
  1. Preheat oven to 350°F.
  2. Using stand mixer fitted with paddle attachment, cream butter and sugar together until light and fluffy. Add eggs, mixing well.
  3. Combine oats, flour, baking soda, and salt in separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition.
  4. Fold in dried cranberries and white chocolate chips.
  5. Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  6. Bake 10 minutes, or until golden brown. Cool on baking sheet for 2 minutes before removing to wire rack to cool completely.
  7. Store in airtight container at room temperature. These cookies age well!

Maple Snickerdoodle Cookies

After the holidays are over, I love finding seasonal merchandise marked down to basement-level clearance prices. I found these Nestle Toll House Maple Morsels for only $1 per bag! The seasonal aroma of maple and cinnamon emanating from the warm oven made our home feel so cozy and comforting while the soft, fluffy texture delivered just what you'd expect from a traditional snickerdoodle cookie. These limited edition morsels will definitely be on my radar to buy again next fall/winter!


Maple Snickerdoodle Cookies
Yield: 4 dozen

Ingredients
Cookies: For Rolling:
  • 3 Tbsp granulated sugar
  • 1 tsp ground cinnamon

Directions
  1. Preheat oven to 350°F.
  2. In small bowl, combine flour, cream of tartar, baking soda, and salt.
  3. In stand mixer fitted with paddle attachment, beat butter, shortening, 1 1/2 cups sugar, and vanilla until creamy.
  4. Add eggs, one at a time, beating well after each addition.
  5. Gradually beat in flour mixture. Stir in morsels.
  6. In small bowl, combine 3 Tbsp sugar and cinnamon.
  7. Roll dough into 1 1/4" balls (I used small cookie dough scoop) and roll in cinnamon-sugar mixture until coated. Place on ungreased baking sheets.
  8. Bake 11-12 minutes, or just until centers are set. Cool on baking sheet for 2 minutes before removing to wire rack to cool completely.

Almond Flour Chocolate Chip Cookies

I've been a bit quiet on my blog lately because I'm going through a huge personal transition... not only will I be eating gluten free, but I have eliminated all dairy from my diet as well. I have been lactose intolerant for basically my entire adult life, but I've been able to consume limited amounts of dairy without too much issue. To keep things real, a bunch of health issues collided in a perfect storm the week before Christmas, and I finally said enough is enough! After thinking about going dairy free for a few months (just ask my husband...I'm sure he got sick of me talking about it), I finally pulled the plug. Just like going gluten free totally sucked in the beginning (there's really not a nicer way to say it), I got used to it and it became my new normal. Now, I will be doing the same with dairy!

I'll admit, these cookies didn't quite satisfy my chocolate chip cookie hankering the way I was hoping they would. The cookies are not as sweet as the desserts I normally make, but maybe that is a good thing... I just need to retrain my tastebuds! On a positive note, I was pleasantly surprised by the soft and pillowy texture of these cookies because almond flour recipes often turn out dense, and these cookies were quite the opposite! I will definitely make them again and maybe play around with the extracts and/or mix of chocolate chips.


Almond Flour Chocolate Chip Cookies
Yield: 30 cookies

Ingredients
  • 1/4 cup coconut oil, room temperature
  • 1/4 cup maple syrup
  • 3 eggs, room temperature
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 3 cups almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup semisweet (or dark) chocolate chips (regular or dairy free, your choice!)

Directions
  1. Preheat oven to 375°F. Line two baking sheets with parchment paper.
  2. Combine almond flour, baking soda, and salt; set aside.
  3. In stand mixer fitted with paddle attachment, beat coconut oil and maple syrup until creamy, but not fully incorporated, about 5 minutes. Add eggs, vanilla, and almond extract (if using) and mix for 2 additional minutes.
  4. Slowly add dry ingredients to egg mixture and mix briefly. Fold in chocolate chips until evenly distributed.
  5. Place large rounded tablespoons onto prepared baking sheets, about 1 inch apart. (I use a small cookie dough scoop for this step.)
  6. Bake until set and golden, about 12-15 minutes.
  7. Remove from pan to wire rack to cool completely.

Double Chocolate Chickpea Flour Cookies

Chickpea flour (also known as garbanzo bean flour) is a nutritional powerhouse when it comes to alternative flours for gluten free baking. Not only is it loaded with protein and high in dietary fiber, but chickpea flour is also a good source of iron.

These rich, chocolate cookies are soft and cake-like in the middle with a crisp and chewy edge around the outside. While these cookies might seem like a bit of an indulgence, just remember they offer a host of health-promoting qualities!


Double Chocolate Chickpea Flour Cookies
Yield: 2 dozen

Ingredients
1 cup chickpea flour
1/3 cup unsweetened cocoa powder
1 tsp baking soda
1/4 tsp salt
1 egg, room temperature
1/2 cup coconut oil, melted
3/4 cup packed brown sugar
2 tsp vanilla
1 tsp instant espresso powder (optional)
1 cup semisweet (or bittersweet) chocolate chips

Directions
1. Preheat oven to 350°F. Line cookie sheet with parchment paper.
2. In medium bowl, whisk together chickpea flour, cocoa powder, baking soda, and salt.
3. In large bowl, whisk together egg, coconut oil, brown sugar, vanilla, and espresso powder, if using, until blended. Add flour mixture, stirring until well combined. Fold in chocolate chips.
4. Roll dough into 1-inch balls. (I used small cookie dough scoop.) Space 2 inches apart on prepared sheet and flatten slightly.
5. Bake 8-10 minutes until edges are set (centers may still look slightly soft). Let cool on sheet for 1 minute, then transfer to wire rack and cool completely.

Crispy Caramel Oatmeal Cookies

In an earlier post, I shared my discovery of Hershey’s Kitchens Sea Salt Caramel Baking Chips. After trying the recipe suggested on the package, I felt it was time to venture out and see what else I could make with these unique chips! That's when I found this new recipe here. These cookies are brimming with a variety of flavors and textures that are sure to please both kid and adult palates alike!


Crispy Caramel Oatmeal Cookies
Yield: 4 1/2 dozen

Ingredients
1 cup brown sugar
1 cup granulated sugar
1/2 cup butter, softened
1/2 cup shortening
1 tsp vanilla
2 eggs, room temperature
2 1/4 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1 tsp baking powder
1/4 tsp salt
1 cup sweetened shredded coconut
1 cup crisped rice cereal (I use Erewhon Crispy Brown Rice)
1 cup Bob's Red Mill Gluten Free Quick Cooking Oats
1 2/3 cups (10 oz pkg) Hershey’s Sea Salt Caramel Baking Chips*

*Can substitute butterscotch chips.

Directions
1. Preheat oven to 350°F.
2. In large bowl, cream brown sugar, granulated sugar, butter, shortening, and vanilla until fluffy. Add eggs; beat well.
3. Stir together flour, baking powder, and salt; gradually blend into butter mixture.
4. Fold in coconut, cereal, oats, and caramel chips.
5. Drop by rounded tablespoonfuls onto ungreased cookie sheet. (I use a small cookie dough scoop.)
6. Bake 14-16 minutes. Cool for 3 minutes; then remove from cookie sheet to wire rack.
7. Cool completely before storing in airtight container.

Peanut Butter Blossoms

This classic recipe is a family favorite! These soft, chewy peanut butter cookies surround a delightful chocolate center. They are the perfect opportunity to invite your children into the kitchen to help you unwrap the candies and then be an official taste-tester once the first batch comes out of the oven!


Peanut Butter Blossoms
Yield: 3-4 dozen

Ingredients
36-48 Hershey’s Kisses
1/2 cup (1 stick) butter, softened
3/4 cup creamy peanut butter
1/3 cup granulated sugar
1/3 cup brown sugar
1 egg, room temperature
2 Tbsp milk (I use almond milk)
1 tsp vanilla
1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1 tsp baking soda
1/2 tsp salt

1/3 cup granulated sugar, for rolling

Directions
1. Preheat oven to 350°F.
2. Beat butter and peanut butter until well blended.
3. Add both sugars. Beat until fluffy.
4. Add egg, milk, and vanilla. Beat well.
5. Stir in flour, baking soda, and salt.
6. Shape dough into 1-inch balls using hands. Roll in granulated sugar. Place on ungreased cookie sheet.
7. Bake 8 minutes. Remove cookie sheet from oven. Immediately press Hershey’s Kiss into center of each cookie (edges will crack). Allow to set for 2-3 minutes before removing from cookie sheet to wire rack to cool completely.
8. Store in airtight container at room temperature.

Peanut Butter Cup Cookies

I found these 24-cup mini muffin pans on clearance at Target after Christmas. I love that two of these pans fit side-by-side in my oven which makes baking a quicker and more efficient task!

And, of course, the Reese's peanut butter cups I used for this recipe were also found on clearance at Target after Christmas. But, since the wrapper gets taken off, no one will know! These cookies would be the perfect homemade treat to bake for your Valentine this week. :)


Peanut Butter Cup Cookies
Yield: 30-40 cookies

Ingredients
1 3/4 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1/2 tsp salt
1 tsp baking soda
1/2 cup butter, softened
1/2 cup white sugar
1/2 cup peanut butter
1/2 cup brown sugar
1 egg
1 tsp vanilla
2 Tbsp milk (I use almond milk)
about 30-40 miniature Reese's butter cups, unwrapped

Directions
1. Preheat oven to 350°F.
2. Whisk together flour, salt, and baking soda in a medium bowl; set aside.
3. Cream together butter, sugar, peanut butter, and brown sugar until fluffy. Beat in egg, vanilla, and milk. Add flour mixture; mix well.
4. Shape into 1 inch balls and place each into an ungreased mini muffin pan.
5. Bake for 8-9 minutes. Remove from oven and immediately press mini peanut butter cup into each cookie. Cool and carefully remove from pan to wire rack.

Sea Salt Caramel Chip Chocolate Cookies

Here is a new product I discovered this holiday season while out shopping for my regular baking supplies: Hershey’s Kitchens Sea Salt Caramel Baking Chips. Oftentimes, these special/seasonal baking products are not gluten free, so I was pleasantly surprised to discover that these fit my dietary needs!


What better way to test drive a new product than to start with the recipe on the back of the package. These soft, fluffy cookies are the perfect combination of sweet chocolate and salty caramel!


Hopefully these sea salt caramel baking chips become a permanent fixture in the Hershey's line of baking products!

Sea Salt Caramel Chip Chocolate Cookies
Yield: 3 dozen

Ingredients
1/2 cup (1 stick) butter, softened
3/4 cup brown sugar
1/2 cup granulated sugar
1 tsp vanilla
2 eggs
1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1/2 cup cocoa powder
1/2 tsp baking soda
1/4 tsp salt
1 2/3 cups (10 oz pkg) Hershey’s Kitchens Sea Salt Caramel Baking Chips

Directions
1. Preheat oven to 350°F. Line cookie sheet with parchment paper.
2. Beat butter, brown sugar, granulated sugar, and vanilla in large bowl until well blended. Add eggs; beat well.
3. Stir together flour, cocoa, baking soda, and salt; gradually blend into butter mixture, blending well.
4. Fold in caramel chips.
5. Drop by well-rounded teaspoons onto prepared cookie sheet. (I use a small cookie dough scoop.)
6. Bake 8-10 minutes, or until cookies are set. Do not overbake! Cool 2-3 minutes, then remove from cookie sheet to wire rack. Cool completely before storing in airtight container.

Chocolate Caramel Rolo Cookies

These soft chocolate cookies have a chewy caramel center thanks to a secret, hidden ingredient: Rolos! This recipe would be perfect for a cookie exchange at Christmas, a sweet treat for your Valentine, or just an everyday dessert to share with your family.

Chocolate Caramel Rolo Cookies
Yield: 4 dozen

Ingredients
2 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
3/4 cup unsweetened cocoa
1 tsp baking soda
1 cup granulated sugar
1 cup brown sugar
1 cup butter, room temperature
2 eggs, room temperature
2 tsp vanilla
48 Rolos candies, unwrapped
1/4 cup granulated sugar, for rolling

Directions
1. Preheat oven to 350°F. Line cookie sheet(s) with parchment.
2. In large mixing bowl, cream granulated sugar, brown sugar, and butter. Add eggs and vanilla; mix until well blended.
3. Add flour, cocoa, and baking soda; mix well.
4. Roll dough into 1 inch balls and place 1 Rolo in center of each dough ball. Form dough ball around Rolo. Roll dough ball in granulated sugar. Place on prepared cookie sheet. Bake for 7-10 minutes.
5. Let cool on pan for 3 minutes before removing to wire rack to cool completely.

Sugar Cookies with Buttercream Frosting

The year my son started preschool was the beginning of the sugar cookie tradition at our house! Every winter, the kids got to spend an entire preschool day in the kitchen, baking and decorating cookies with their teachers and parent volunteers. They then got to share and eat these cookies with their friends and family after their Christmas program in December.

My older two children are 23 months apart (on the dot), so we spent four consecutive holidays making these sugar cookies. The following year, my youngest daughter was not yet old enough to start preschool (she's three years behind her older sister in school), so my kids requested that we continue the annual tradition at home. How could I say no to that?!

At preschool, the kids decorated the cookie cut-outs with sprinkles pressed into the dough before baking. I figured I could improve upon an already good thing with the addition of some buttercream frosting and then sprinkles after baking. :) Either way, these are the best sugar cookies I've ever eaten!


Sugar Cookies
Yield: about 4-5 dozen (depends on cookie cutter shapes/sizes)

Ingredients
3 cups powdered sugar
2 cups (4 sticks) butter, room temperature
2 eggs, room temperature
3 tsp vanilla
5 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
2 tsp baking soda
2 tsp cream of tartar

Directions
1. Make dough day before planning to bake: Cream sugar and butter. Add eggs and vanilla. Mix thoroughly. Blend in dry ingredients. Pat dough into large ball and place inside gallon size Ziploc bag; seal tightly. Chill in refrigerator overnight.
2. Take dough out of refrigerator shortly before rolling out to bake.
3. Preheat oven to 375°F (or 350°F if using convection oven).
4. Open bag and invert dough onto clean countertop. Gently knead dough with hands. Dough will be crumbly at first but will stick together more as it warms up. Roll dough in powdered sugar (not flour!) to 1/4 inch thick. Cut with cookie cutters. Place on ungreased cookie sheets.
5. Bake 5-8 minutes.
6. Let cool 2 minutes on cookie sheet before removing to wire rack to cool completely.
7. Once cool, decorate with buttercream frosting (see below) and holiday sprinkles!


Buttercream Frosting
Yield: 3 cups

Ingredients
1/2 cup Crisco (original kind only!)
1/2 cup (1 stick) butter, room temperature
1 tsp clear vanilla extract*
4 cups powdered sugar
2 Tbsp milk (I use almond milk)

*Note: Do not use regular vanilla extract! Using clear vanilla extract keeps the frosting a bright white color.

Directions
1. Stiff Consistency: In large bowl, cream Crisco and butter with electric mixer. Add vanilla. Gradually add sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. Add milk and beat at medium speed until light and fluffy.
2. Thin (Spreading) Consistency: Beat in additional 2 Tbsp milk.

Chocolate Kiss Cookies

I made these for my son's Christmas party at school today and there was not a single cookie left! I'm going to take that as a good sign that the third graders loved them. :) I will definitely add this recipe to my annual Christmas cookie collection!


Chocolate Kiss Cookies
Yield: 3 dozen

Ingredients
2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
1 cup cocoa powder
1/4 tsp salt
1 cup (2 sticks) unsalted butter, softened
1 1/3 cups granulated sugar
2 eggs, room temperature
4 Tbsp milk
2 tsp vanilla
1 cup nonpareil sprinkles
36 Hershey’s Kisses, unwrapped

Directions
1. Preheat oven to 350°F. Line baking sheets with parchment paper and set aside.
2. In medium bowl, whisk together flour, cocoa, and salt. Set aside.
3. In bowl of stand mixer (or using handheld mixer), beat butter on medium-high speed until smooth, about 1 minute. Add sugar and beat on medium-high speed until creamed, about 2 minutes. Add eggs and beat on high speed until combined, about 1 minute. Scrape down sides and bottom of bowl and beat again as needed to combine. Add dry ingredients, milk, and vanilla. Mix on low speed until combined. Batter will be stiff.
4. Pour sprinkles into small bowl. Using small cookie dough scoop (or about 2 Tbsp dough per cookie), roll balls of dough between hands, then roll each ball in sprinkles to coat. Place on prepared baking sheet, 2 inches apart.
5. Bake cookies for 10-12 minutes.
6. Remove cookies from oven and allow to cool on baking sheet for 5 minutes. Press chocolate kiss into center of each cookie. Cookies will crack so gently squeeze cookie around Hershey's kiss to set. Transfer cookies to wire rack to cool completely.
7. Cookies will keep in airtight container at room temperature for up to 1 week.

Almond Bark Cookies

This recipe holds a tremendous amount of sentimental value for me. When I was in junior high, I regularly babysat for our neighbors across the street who had two little boys. The parents went to a number of holiday parties every winter, and Mrs. Rickert made the most delicious Christmas sweets! These cookies were by far my most favorite treat of hers. One day my mom told her how much I loved these cookies. From then on, she made sure to have some for me every time I would go over to her house to babysit! She was such a thoughtful woman. Thankfully she shared the recipe with my mom because we moved out of state a couple years later. Now I think of her, the boys, and all our fun babysitting memories every Christmas when I make these cookies!


Almond Bark Cookies
Yield: depends on how large or small you make them!

Ingredients
24 oz package white almond bark
1 cup creamy peanut butter
2 cups peanuts (I use lightly salted)
3 cups mini marshmallows
2 cups crisped rice cereal (I use Erewhon Crispy Brown Rice)

Directions
1. Put almond bark in glass bowl and follow melting directions on package.
2. Add peanut butter. Stir until smooth.
3. Add peanuts, marshmallows, and cereal. Stir until evenly coated.
4. Drop by spoonfuls onto wax paper. Chill to set.
5. Store in refrigerator.
