Peppermint Bark

The combination of chocolate and peppermint in this no bake treat makes for the perfect homemade gift during the holiday season. From my kitchen to yours, Merry Christmas and Happy New Year!


Peppermint Bark
Yield: 9x13 pan

Ingredients
  • 1 cup (8 oz) dark chocolate, chopped
  • 1 cup (8 oz) white chocolate, chopped
  • 1 tsp coconut oil, divided
  • 1/4 tsp peppermint extract, divided
  • 1 cup crushed peppermint candies (to taste), divided

Directions
  1. Line shallow 9x13 baking pan with parchment paper (leave extra hanging over two longer edges for easier removal after cooling); set aside.
  2. Melt dark chocolate. Stir in 1/2 tsp coconut oil and 1/8 tsp peppermint extract. Evenly spread in thin layer in prepared pan. Sprinkle with half of crushed peppermint candies. Refrigerate just until solid, about 15 minutes.
  3. Melt white chocolate. Stir in remaining 1/2 tsp coconut oil and 1/8 tsp peppermint extract. Carefully spread over dark chocolate layer, taking care not to push down too much or dark chocolate will start melting into it. Sprinkle remaining crushed peppermint candies over white chocolate.
  4. Refrigerate peppermint bark until solid, about an hour. Once completely cooled, break into pieces. Store in airtight container in refrigerator for up to 2 weeks.

Creamy Peanut Butter Fudge

Fudge is a Christmas tradition in our house. I've been making my cookies & cream fudge for over a decade now, so it's the gold standard that all other fudge recipes get compared with. And let me tell you, my kids said they have found a new favorite in this creamy peanut butter fudge! It's smooth, rich, and full of flavor. I will definitely be adding this recipe to our annual holiday baking list!


Creamy Peanut Butter Fudge
Yield: 9x13 pan

Ingredients
  • 2 1/2 cups sugar
  • 3/4 cup (1 1/2 sticks) butter
  • 2/3 cup (5 oz can) evaporated milk
  • 1/3 cup creamy peanut butter (I use Jif)
  • 7 oz jar marshmallow creme
  • 10 oz pkg peanut butter chips

Directions
  1. Line shallow 9x13 baking pan with parchment paper (leave extra hanging over two longer edges for easier removal after cooling); set aside.
  2. Combine sugar, butter, and evaporated milk in medium, heavy-duty saucepan over medium heat. Bring to full rolling boil, stirring constantly. Boil, stirring constantly, for 3 minutes. Remove from heat.
  3. Stir in peanut butter, marshmallow creme, and peanut butter chips; mix until smooth.
  4. Pour fudge into lined pan.
  5. Cool at room temperature until pan is no longer warm (about 2-3 hours). Then move pan to refrigerator to chill (about 1-2 hours).
  6. Lift fudge from baking pan using parchment "handles" and discard parchment. Cut into small pieces. Store in refrigerator in airtight container.

Peanut Butter Chocolate Layer Cake

Reese's lovers unite! Three layers of moist chocolate cake are sandwiched between rich peanut butter frosting and studded with crumbled peanut butter cups in this deliciously decadent dessert.


Peanut Butter Chocolate Layer Cake
Yield: 3 layer cake

Ingredients
Chocolate Cake:
  • 3 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 2 cups sugar
  • 3/4 cup cocoa
  • 2 1/4 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 2 large eggs, room temperature
  • 1 cup hot water (or coffee for deeper flavor!)
Peanut Butter Frosting:
  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1 1/4 cups creamy peanut butter (I use Jif)
  • 1/8 tsp salt
  • 7 cups powdered sugar
  • 6–7 Tbsp milk
  • 12 full size Reese's peanut butter cups

Directions
  1. Preheat oven to 350°F. Grease three 9-inch cake pans with nonstick cooking spray, line with parchment paper, then grease parchment paper; set aside.
  2. Add flour, sugar, cocoa, baking soda, baking powder, and salt to large mixer bowl fitted with paddle attachment and combine. Set aside.
  3. In medium-sized bowl, whisk together milk, vegetable oil, vanilla extract, and eggs.
  4. Add wet ingredients to dry ingredients and beat on medium-low speed until well combined.
  5. Slowly add hot water to batter and mix on low speed until well combined. Scrape down sides of bowl as needed to make sure everything is well combined.
  6. Divide batter evenly between prepared cake pans. Bake for 17-20 minutes, or until toothpick comes out with a few moist crumbs.
  7. Remove cakes from oven and allow to cool for 2-3 minutes, then turn out from pans, remove & discard parchment paper, and cool completely on wire racks. Cakes must be completely cool before frosting and assembling.
  8. Once cakes are cooled, prepare frosting. In stand mixer fitted with whisk attachment, cream together butter, peanut butter, and salt until smooth.
  9. Add about half of powdered sugar and 3 Tbsp milk; mix until smooth.
  10. Add remaining powdered sugar and milk; mix until smooth. Keep an eye on frosting consistency - add more powdered sugar if too thin or more milk if too thick.
  11. To assemble cake, place one cake layer (dome side down) on platter and top with about 1 cup of frosting. Smooth frosting into an even layer. Top with 4 crumbled Reese's peanut butter cups and gently press into frosting. Spread a small amount of frosting on top of Reese’s so that it’s sticky on top for the next cake layer.
  12. Add second cake layer and top with about 1 cup of frosting. Smooth frosting into an even layer. Top with 4 crumbled Reese's peanut butter cups and gently press into frosting. Spread a small amount of frosting on top of Reese’s so that it’s sticky on top for the next cake layer.
  13. Add third and final cake layer to top of cake. Smooth remaining frosting over top and sides of cake. Crumble remaining 4 Reese's peanut butter cups over top of cake and gently press into frosting.
  14. Cake doesn't need to be made a day in advance, but do allow a few hours after assembly before serving for moisture and flavors to combine.
  15. Serve at room temperature. Cake is best for 3-5 days.

Crock Pot Pulled Pork (Chicken)

For an effortless - yet flavorful - dinner, load these five ingredients into the crockpot and you'll be thanking yourself later! Better yet, this recipe can be prepared with either pork or chicken - the choice is yours!


Crock Pot Pulled Pork (Chicken)
Yield: 8-12 servings

Ingredients
Pork:
  • 3 lbs boneless pork butt (or pork shoulder)
  • 2 (12 oz) cans Coca Cola
  • 1/4 cup chili powder
  • 3 Tbsp garlic salt
  • 1+ cups BBQ sauce (I use Sweet Baby Ray’s Original)
Chicken:
  • 2 lbs boneless, skinless chicken breast
  • 1 (12 oz) can Coca Cola
  • 2 Tbsp chili powder
  • 1 1/2 Tbsp garlic salt
  • 1/2+ cup BBQ sauce (I use Sweet Baby Ray’s Original)

Directions
  1. Place pork (chicken) in slow cooker and season with chili powder and garlic salt.
  2. Pour Coca Cola in slow cooker, adding just enough to almost cover pork (chicken) — you do not need to cover meat completely.
  3. Cook on low 8 hours.
  4. Remove half of liquid from slow cooker using a ladel into a bowl (reserve in case you need to add some moisture back in).
  5. Shred pork (chicken) in slow cooker with two forks. Add BBQ sauce, stir, add more BBQ sauce and/or reserved liquid to reach desired consistency.
  6. Cover and cook another hour on low to allow flavors to develop and meat to become juicy. Stir before serving.

Sweet & Spicy Cashews

Now that we're heading into the cooler months, the sweet heat of these cashews makes for the perfect snack to warm you up!


Sweet & Spicy Cashews
Yield: 4 cups

Ingredients
  • 1/2 cup honey
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cayenne pepper
  • 4 cups raw cashew nuts
  • 1/4 cup coconut sugar
  • 1 tsp salt

Directions
  1. Preheat oven to 325°F. Line two baking sheets with parchment paper.
  2. Stir together coconut sugar and salt; set aside.
  3. Stir together honey, chili powder, paprika, and cayenne pepper. Add cashews and toss to coat.
  4. Spread cashews in single layer on prepared baking sheet. Roast for 5 minutes, remove pan from oven and stir cashews, then roast an additional 5 minutes.
  5. Transfer cashews to second prepared baking sheet to cool for 3-5 minutes, then toss in sugar-salt mixture. Spread into single layer to continue cooling.
  6. Allow cashews to cool completely before storing in airtight container. (Tip: Line bottom of container with parchment to prevent sticking and use parchment between layers of cashews.)

Crock Pot Sloppy Joes

With only four ingredients, this recipe is super simple yet packed with flavor. Better yet, it's comfort food at it's finest!


Crock Pot Sloppy Joes
Yield: 12 servings

Ingredients
  • 3 lbs ground beef (or ground turkey)
  • 1/3 cup brown sugar
  • 1/3 cup yellow mustard
  • 1 1/2 cups ketchup

Directions
  1. Brown ground beef until no longer pink, then add to slow cooker.
  2. Add remaining ingredients to slow cooker and stir to combine.
  3. Cook on low for 3-5 hours. Stir before serving on hamburger buns.

Chocolate Chip Cake with Buttercream Frosting

The combination of flavors in this dessert is reminiscent of everyone's favorite milk and cookies duo, only in cake form!


Chocolate Chip Cake with Buttercream Frosting
Yield: 2 layer cake

** Note: This recipe needs to be made one day in advance! **

Ingredients
Chocolate Chip Cake:
  • 3/4 cup unsalted butter, softened
  • 3/4 cups granulated sugar
  • 3/4 cup brown sugar, loosely packed
  • 3 eggs, room temperature
  • 1 Tbsp pure vanilla extract
  • 1/2 cup sour cream
  • 2 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup mini chocolate chips
Buttercream Frosting:
  • 3/4 cup Crisco (original kind only!)
  • 3/4 cup butter, softened
  • 2 tsp clear vanilla extract
  • 1/8 tsp salt
  • 6 cups powdered sugar
  • 4-6 Tbsp milk

Directions
  1. Preheat oven to 350°F. Grease two 9-inch cake pans with nonstick cooking spray, line with parchment paper, then grease parchment paper; set aside.
  2. Using stand mixer fitted with paddle attachment, beat butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, mixing until just combined after each. Add sour cream and pure vanilla extract, and mix until well combined.
  4. Add flour, baking powder, salt, and milk. Mix just until combined. Scrape down sides of bowl as needed to ensure all ingredients are well incorporated.
  5. Fold in mini chocolate chips. Divide batter evenly between prepared pans.
  6. Bake 30-35 minutes, or until toothpick inserted into center comes out clean or with just a few crumbs attached. Allow cakes to cool in pans 10 minutes, then turn out from pans, remove & discard parchment paper, and cool completely on wire racks. Cakes must be completely cool before frosting and assembling.
  7. Once cakes are cooled, prepare frosting. In stand mixer fitted with whisk attachment, cream together Crisco and butter. Add clear vanilla extract and salt. Gradually add powdered sugar alternately with milk, beating on low speed until blended. Scrape down sides of bowl as needed. Then continue at high speed until smooth and creamy.
  8. To assemble cake, place one cake layer (dome side down) on platter, spread with frosting (make sure layer is even!), place second cake layer (dome side up) on top of frosting, and spread additional frosting over top and sides of cake.
  9. Cover and store at room temperature overnight before serving.

Oatmeal Chocolate Chip Muffins

These moist, tender muffins are perfect for breakfast, brunch, snack time, or your mid-morning coffee break. Not only are they gluten free, but they can also be made dairy free as well!


Oatmeal Chocolate Chip Muffins
Yield: 1 dozen

Ingredients

Directions
  1. Preheat oven to 350°F. Line muffin tin with paper liners; set aside.
  2. Using stand mixer fitted with paddle attachment, cream butter and sugar together until light and fluffy. Add egg and baby food, mixing well.
  3. Stir in flour, oats, baking powder, baking soda, and salt. Mix just until combined.
  4. Fold in chocolate chips.
  5. Fill paper liners 3/4 full with batter.
  6. Bake 17-20 minutes, or until toothpick inserted in center comes out clean. Cool in pan for 10 minutes before removing to wire rack to cool completely.
  7. Store in airtight container at room temperature for a few days or refrigerate for longer.

Chocolate Cake Donuts

When your daughter asks to make donuts, how can you say no?! One of the perks of being stuck at home this summer has been the quality time I've spent baking in the kitchen with my kids. It has been fun to make family favorite recipes as well as trying new ones, like this!


Chocolate Cake Donuts
Yield: 1 dozen

Ingredients
Donuts:
  • 1/2 cup packed brown sugar
  • 3 Tbsp coconut oil
  • 1 egg, room temperature
  • 1 tsp vanilla
  • 3/4 cup almond milk
  • 1 1/4 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/4 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
Glaze:
  • 1 cup powdered sugar
  • 1 tsp vanilla
  • 1/4 cup cocoa powder (for chocolate glaze or additional powdered sugar for vanilla glaze)
  • 2-3 Tbsp almond milk (depending on desired consistency)

Directions
  1. Preheat oven to 350°F. Spray donut pan with nonstick cooking spray; set aside.
  2. In stand mixer fitted with paddle attachment, cream brown sugar and coconut oil. Add egg, vanilla, and almond milk. Mix well.
  3. Add flour, cocoa, baking powder, baking soda, and salt. Mix until fully combined.
  4. Spoon batter into large plastic storage bag. Close seal of bag. Cut tip off bag corner. Carefully squeeze bag to fill donut pan.
  5. Bake 10-12 minutes, or until donuts spring back when gently pressed.
  6. In small bowl, whisk together glaze ingredients. Dip each warm donut into glaze and then top with sprinkles. Place on wire rack until ready to serve.
  7. Store in airtight container at room temperature.

Orange Dreamsicle Cake

This light and flavorful citrus cake is a throwback to everyone's favorite childhood ice cream treat: the Dreamsicle! This cake is sure to be the hit of any summertime party.


Orange Dreamsicle Cake
Yield: 2 layer cake

** Note: This recipe needs to be made one day in advance! **

Ingredients
Cake:
  • 1 1/2 sticks (12 Tbsp) unsalted butter, room temperature
  • 1 1/2 cups sugar
  • 4 eggs, room temperature
  • 3/4 cup frozen orange juice concentrate, thawed
  • 1/2 cup milk
  • 1 Tbsp orange extract
  • 2 1/4 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/3 cup cornstarch
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
Filling:
  • 3.4 oz box instant vanilla pudding mix
  • 2 cups whipping cream
  • 1 tsp orange extract
Frosting:
  • 2 sticks (1 cup) unsalted butter, softened
  • 2 (8 oz) packages cream cheese, softened
  • 1 tsp clear vanilla extract
  • 1 tsp orange extract
  • 1/8 tsp salt
  • 6 cups powdered sugar

Directions
  1. Preheat oven to 350°F. Grease two 9-inch cake pans with nonstick cooking spray, line with parchment paper, then grease parchment paper; set aside.
  2. Using stand mixer fitted with paddle attachment, beat butter and sugar until smooth and creamy. Add eggs and mix well. Beat in orange juice, milk, and orange extract. (Scrape sides and bottom of bowl as needed.) Add dry ingredients and mix just until combined. Divide batter evenly between prepared pans.
  3. Bake 20-25 minutes, or until toothpick inserted into center comes out clean or with just a few crumbs attached. Allow cakes to cool in pans 10 minutes, then turn out from pans, remove & discard parchment paper, and cool completely on wire racks. Cakes must be completely cool before frosting and assembling.
  4. Once cakes are cooled, prepare filling. In stand mixer fitted with whisk attachment, combine pudding mix, whipping cream, and orange extract on high speed until thick and fluffy. Set aside for assembly.
  5. In stand mixer fitted with whisk attachment, cream together butter and cream cheese. Add vanilla and orange extracts. Gradually add powdered sugar, beating on low speed until blended. Continue at high speed until smooth and creamy.
  6. To assemble cake, place one cake layer (dome side down) on platter, spread with filling (use all of it and make sure layer is even!), place second cake layer (dome side up) on top of filling, and spread frosting over top and sides of cake. Pipe additional decorations, if desired. (There will be plenty of frosting leftover!)
  7. Cover and refrigerate overnight before serving.

Flaxseed Muffins

Finally, a healthy muffin that tastes great! Flaxseed is a good source of dietary fiber, protein, iron, and healthy omega-3 fats. Ground flaxseed can improve digestive health and may lower blood cholesterol levels, making it a great addition to you diet!


Flaxseed Muffins
Yield: 9 muffins

Ingredients
  • 2 large eggs, room temperature
  • 1/2 cup almond milk
  • 1 tsp vanilla
  • 1/3 cup coconut sugar
  • 3 Tbsp granulated sugar
  • 1/4 cup melted coconut oil
  • 1/2 cup ground flaxseed
  • 1/2 cup almond flour
  • 3/4 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 Tbsp baking powder
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt

Directions
  1. Preheat oven to 350°F.
  2. Line muffin tin with liners; set aside.
  3. Whisk eggs in large bowl.
  4. Add milk, vanilla, sugars, and oil and whisk until smooth and combined.
  5. Add remaining ingredients and whisk just until all ingredients are combined.
  6. Divide batter evenly between muffin cups using large cookie dough scoop.
  7. Bake 15-17 minutes, or until toothpick inserted in center comes out clean.
  8. Cool in pan for 10 minutes before removing to wire rack to cool completely.
  9. Store in airtight container at room temperature for a few days or freeze for later.

Snickerdoodle Cake

Three layers of vanilla cake are studded with crunchy cinnamon streusel and topped with creamy brown sugar cream cheese buttercream frosting. My 6 year old daughter has already decided that this will be the cake she requests for her birthday in October!


Snickerdoodle Cake
Yield: 3 layer cake

** Note: This recipe needs to be made one day in advance! **

Ingredients
Cake:
  • 3 1/4 cup Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/3 cup corn starch
  • 1 tsp salt
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 cups (3 sticks) unsalted butter, room temperature
  • 1 2/3 cups granulated sugar
  • 3 large eggs + 2 additional egg whites, room temperature
  • 1 Tbsp pure vanilla extract
  • 1 1/2 cups buttermilk (or substitute 1.5 Tbsp lemon juice plus enough milk to equal 1.5 cups, stir & let stand 5 minutes)
Streusel: Frosting:
  • 1 1/4 cups (2 1/2 sticks) unsalted butter, room temperature
  • 8 oz block full-fat cream cheese, room temperature
  • 3/4 cup packed light brown sugar
  • 1 Tbsp ground cinnamon
  • 6 cups powdered sugar
  • 1/4 cup milk
  • 1 tsp pure vanilla extract
  • 1/8 tsp salt

Directions
  1. Preheat oven to 350°F. Grease three 9-inch cake pans with nonstick cooking spray, line with parchment paper, then grease parchment paper.
  2. Sift flour, corn starch, salt, baking powder, and baking soda together; set aside.
  3. Using stand mixer fitted with paddle attachment, beat butter and sugar on high speed until smooth and creamy, about 3 minutes. Scrape sides and bottom of bowl as needed.
  4. Beat in 3 eggs, 2 egg whites, and vanilla on high speed until combined, about 2 minutes. (Mixture will look curdled.) Scrape sides and bottom of bowl as needed.
  5. With mixer running on low speed, slowly add dry ingredients. With mixer still running on low speed, slowly pour in buttermilk; mix just until combined. You may need to stir by hand to ensure no lumps remain at bottom of bowl. Batter will be slightly thick. Pour batter evenly into cake pans; set aside while making streusel.
  6. With a fork, mix brown sugar, flour, and cinnamon together until combined. Pour melted butter on top and mix just until combined. Immediately crumble streusel over batter in cake pans; gently pat down with hands.
  7. Bake 23-26 minutes, or until toothpick inserted in center comes out clean. Allow cakes to cool in pans 15 minutes, then turn out from pans, remove & discard parchment paper, and cool completely on wire racks. Cakes must be completely cool before frosting and assembling.
  8. Using stand mixer fitted with whisk attachment, beat butter and cream cheese on medium speed until creamy, about 2 minutes. Add brown sugar and cinnamon; beat on medium-high speed until combined, about 1 minute. Stop mixer and add powdered sugar, milk, vanilla, and salt. Turn mixer on low speed and beat for 30 seconds, then turn mixer up to medium-high speed and beat until completely smooth and creamy. (Scrape sides and bottom of bowl as needed.)
  9. To assemble cake, place one cake layer on platter, spread with 3/4 cup frosting, top with another cake layer, spread with 3/4 cup frosting, and end with final cake layer. Spread remaining frosting over top and sides of cake.
  10. Cover and refrigerate overnight before serving. (This cake ages well!)

Copycat Trader Joe's Everything But the Bagel Dip

This irresistible dip pairs perfectly with vegetables, crackers, pretzels, and chips making it the perfect appetizer for any party!


Copycat Trader Joe's Everything But the Bagel Dip
Yield: 2 cups

Ingredients
Dip:
  • 16 oz sour cream
  • 1/3 cup Everything But the Bagel Seasoning blend (from Trader Joe's or Walmart or homemade blend below)
Homemade Seasoning Blend (makes scant 1/2 cup):
  • 1 1/2 Tbsp dried minced onion
  • 1 1/2 Tbsp white sesame seeds
  • 1 Tbsp dried minced garlic
  • 1 Tbsp black sesame seeds
  • 1 Tbsp poppy seeds
  • 3/4 Tbsp flaked sea salt OR regular table salt

Directions
  1. If you are using store-bought seasoning, you will not need to toast it. Skip down to step 3.
  2. If using homemade blend, add 1/3 cup to small skillet over medium heat. Toast seasonings until dried onion and sesame seeds are light golden brown and very fragrant. Let pan sit on burner for 15-20 seconds; then lift, swirl, and repeat. The whole process should take a minute or so. Set pan aside to let mixture cool slightly.
  3. Add sour cream to medium-sized bowl. Add seasoning blend and stir until evenly combined. Cover and store in refrigerator.
  4. Dip is best served after chilling for 12+ hours or overnight. The flavors develop more the longer it sits!

Homemade Balsamic Vinaigrette Dressing

This light and healthy dressing is perfect on salads, in a wrap, or as a marinade and it comes together in under 5 minutes!


Homemade Balsamic Vinaigrette Dressing
Yield: 1 cup

Ingredients
  • 2/3 cup olive oil
  • 1/3 cup balsamic vinegar
  • 1 Tbsp honey
  • 2 tsp minced garlic
  • 1 tsp Dijon mustard
  • 1/4 tsp dried basil
  • 1/4 tsp ground black pepper
  • 1/8 tsp salt

Directions
  1. Measure and combine all ingredients into mason jar, dressing bottle, or bowl.

Stuffed Mushrooms

In this simple appetizer recipe, tender white mushrooms are stuffed with creamy filling and topped with crunchy panko. These little bites of heaven are perfect for any occasion, served piping hot from the oven!


Stuffed Mushrooms
Yield: 1  1/2 dozen

Ingredients
For Mushrooms:
  • 24 oz package large whole white mushrooms
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 8 oz package cream cheese, softened
  • 1/4 tsp onion powder
  • 1/4 cup shredded cheese
For Topping:
  • 1/4 cup gluten free panko breadcrumbs
  • 2 Tbsp butter, melted
  • 1 tsp dried parsley

Directions
  1. Preheat oven to 375°F.
  2. Wipe mushrooms with damp paper towel to clean. Gently remove stems and set aside. Arrange mushrooms caps in baking dish coated with nonstick cooking spray.
  3. Finely chop mushroom stems. In small skillet over medium-high heat, cook stems and garlic in olive oil until tender. Add cream cheese, onion powder, and shredded cheese. Stir until well combined and cream cheese is completely melted. Fill each mushroom cap with creamy mixture.
  4. In small bowl, combine topping ingredients. Sprinkle over filled mushroom caps.
  5. Bake 25 minutes, or until mushrooms are tender and topping is golden brown.
  6. Serve hot from the oven!

Coconut Cupcakes

These special cupcakes, topped with cream cheese frosting and shredded coconut, are the perfect way to celebrate a birthday, anniversary, holiday, or any other important milestone event!


Coconut Cupcakes
Yield: 1 dozen

Ingredients
For Cupcakes:
  • 1 1/2 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 cup granulated sugar
  • 6 Tbsp butter, softened
  • 3 eggs, room temperature
  • 3/4 tsp vanilla extract
  • 3/4 tsp almond extract
  • 1/2 cup buttermilk
  • 1 1/3 cups sweetened shredded coconut
For Frosting:
  • 8 oz package cream cheese, softened
  • 6 Tbsp butter, softened
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 3 cups powdered sugar
  • additional sweetened shredded coconut

Directions
  1. Preheat oven to 325°F.
  2. In stand mixer fitted with paddle attachment, cream butter and sugar until light and fluffy. With mixer running on low, add eggs one at a time, scraping down bowl after each addition. Add vanilla and almond extracts and mix well.
  3. In separate bowl, sift together flour, baking powder, baking soda, and salt. In three parts, alternately add dry ingredients and buttermilk to batter, beginning and ending with dry. Mix until just combined. Fold in coconut.
  4. Line muffin pan with paper liners. Fill each cup to the top with batter.
  5. Bake 25-30 minutes, or until tops are brown and toothpick comes out clean.
  6. Allow to cool in pan for 15 minutes. Remove to baking rack and cool completely. Then prepare cream cheese frosting.
  7. In stand mixer fitted with whisk attachment, blend together cream cheese and butter. Add vanilla and almond extracts and mix well. Add powdered sugar and mix until smooth, scraping down bowl as needed.
  8. Frost cupcakes and sprinkle with additional coconut.
  9. Store covered in refrigerator.
Note: Cupcakes are best prepared one day in advance to allow frosting to set.

French Toast Casserole

Instead of making traditional French toast on the stovetop where you can only cook a few servings at a time, try baking this casserole in the oven so that everyone can sit down at the table together to enjoy brunch at the same time!


French Toast Casserole
Yield: 8x8 pan

Ingredients
For Casserole:
  • 6-8 cups cubed gluten free bread (I used this recipe)
  • 1 1/4 cups almond milk
  • 4 eggs, room temperature
  • 6 Tbsp sugar
  • 1 Tbsp vanilla
  • 1 tsp cinnamon
For Topping:

Directions
  1. Preheat oven to 350°F.
  2. Grease 8x8 baking dish with nonstick cooking spray. Evenly layer bread cubes in prepared dish.
  3. In medium bowl, whisk together almond milk, eggs, sugar, vanilla, and cinnamon. Pour mixture over bread.
  4. In separate bowl, mix together topping ingredients with fork. Crumble over bread.
  5. Bake 30-35 minutes, or until center is set and topping is browned.
  6. Serve hot from the oven topped with maple syrup. Enjoy!

Snickerdoodles

My middle daughter has been learning about fractions in math class, so her teacher tasked the students with preparing a recipe in the kitchen (with adult supervision, of course!) to reinforce the concepts they learned throughout third grade. What a fun, and delicious, way to end the school year!


Snickerdoodles
Yield: 6 dozen

Ingredients
For Cookies: For Rolling:
  • 3 Tbsp sugar
  • 3 tsp cinnamon

Directions
  1. Preheat oven to 350°F. Line baking sheets with parchment paper or silpat baking mats; set aside.
  2. In stand mixer fitted with paddle attachment, cream butter and sugar until light and fluffy. Add eggs and vanilla; mix well.
  3. Stir in flour, cream of tartar, baking soda, and salt; mix just until combined.
  4. In small bowl, stir together sugar and cinnamon for rolling.
  5. Roll dough into balls the size of small walnuts (about 1/2 Tbsp). Roll in cinnamon sugar mixture until evenly coated. Place 2" apart on prepared baking sheets.
  6. Cook 8 minutes. (Cookies puff up at first, then flatten out.)
  7. Cool 2 minutes before removing to wire rack to cool completely.
  8. Store in airtight container at room temperature.

Honey Bread

I've been craving a peanut butter and jelly sandwich lately, so I figured I would pick up a loaf of gluten free bread at the store to get my fix. Unfortunately, I couldn't stomach the $6 price tag, so I decided to bake my own bread instead!

This aromatic loaf is the perfect canvas to build any type of sandwich, whether you're in the mood for something sweet (pb&j) or something savory (chicken salad), and could even be used to make french toast!


Honey Bread
Yield: 1 loaf

Ingredients
Directions
  1. Preheat oven to 325°F. Grease loaf pan with nonstick cooking spray, line with parchment paper, and grease with nonstick cooking spray again; set aside.
  2. In stand mixer fitted with paddle attachment, combine flour, baking powder, baking soda, and cinnamon; set aside.
  3. Mix instant coffee with boiling water; add to flour mixture.
  4. Blend in oil, honey, and eggs.
  5. Pour batter into prepared pan.
  6. Cover loosely with tin foil (to prevent over browning) and bake 30 minutes.
  7. Remove tin foil and cook additional 30-40 minutes, or until toothpick inserted near center comes out clean.
  8. Allow to cool in pan for 10 minutes, then lift from pan, discard parchment, and transfer to wire rack to cool completely.
  9. Store wrapped in plastic wrap and then aluminum foil to keep fresh.

Cake Batter Cookies
Yield: 3 dozen

Ingredients
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs, room temperature
  • 2 tsp vanilla
  • 2 1/3 cups Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white chocolate chips
  • 1/4 cup sprinkles (jimmies, not nonpareils)


Directions
  1. Preheat oven to 350°F. Line baking sheets with parchment paper or silicone baking mats.
  2. In stand mixer fitted with paddle attachment, beat butter and sugar until creamy. Add eggs and vanilla; mix until combined.
  3. Add flour, baking powder, baking soda, and salt; mix until combined.
  4. Fold in white chocolate chips and sprinkles until evenly distributed.
  5. Use small cookie dough scoop and roll dough between hands before placing 2-3 inches apart on prepared baking sheets.
  6. Bake 9 minutes, or until edges are set and dough is no longer shiny. (Cookies will brown just slightly.)
  7. Cool on baking sheets 3 minutes, then remove from pan to wire rack to cool completely.

Maple Nut Fudge

I didn't quite need the entire can of evaporated milk when making these caramel brownies, so I decided to try a new fudge recipe to use up the leftovers! The toasted walnuts add crunchy texture and depth of flavor to this decadent, creamy fudge. This recipe will be perfect for the holiday season and make for a delicious Christmas gift!


Maple Nut Fudge
Yield: 9x13 pan

Ingredients
  • 2 cups chopped walnuts
  • 3 cups granulated sugar
  • 3/4 cup (1 1/2 sticks) butter
  • 2/3 cup (5 oz can) evaporated milk
  • 2 cups white chocolate chips
  • 7 oz jar marshmallow creme
  • 2 1/2 tsp maple extract

Directions
  1. Preheat oven to 350°F.
  2. Spread walnuts in single layer on baking sheet. Bake 3 minutes, stir, then bake additional 3 minutes. (Be careful not to burn!) Let cool.
  3. Grease 9x13 baking pan with nonstick cooking spray. Line with parchment paper. Set aside.
  4. Combine sugar, butter, and evaporated milk in heavy bottomed saucepan. Bring to boil over medium heat, stirring often. Once at full boil, maintain boiling for 3 minutes, stirring constantly.
  5. Turn off heat. Stir in white chocolate chips until smooth.
  6. Add marshmallow creme and maple extract. Stir until smooth.
  7. Fold in toasted walnuts.
  8. Pour into prepared pan.
  9. Cool at room temperature until pan is no longer warm (about 2-3 hours). Then move pan to refrigerator to chill (about 1-2 hours).
  10. Lift fudge from pan, discard parchment, and cut into squares. Store in refrigerator.
  11. To maximize maple flavor, serve fudge at room temperature. (Simply remove fudge from refrigerator 30 minutes to an hour before serving.)

Turkey Burgers

Warm weather means it's time to fire up the grill! This simple recipe requires minimal prep work and just a short cooking time, perfect for entertaining or a busy weeknight dinner. These delicious turkey burgers turn out juicy and flavorful every time!


Turkey Burgers
Yield: 4 patties

Ingredients
  • 16 oz Jennie-O 93% lean ground turkey
  • 1 Tbsp gluten free plain dried breadcrumbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp (heaping) garlic powder
  • 1/4 tsp (heaping) onion powder
  • 2 tsp Worcestershire sauce

Directions
  1. Add ground turkey to a medium mixing bowl. Sprinkle in breadcrumbs, spices, and Worcestershire sauce.
  2. Gently break up meat to evenly incorporate seasonings.
  3. Divide mixture into 4 equal portions and shape into patties about 1/2-inch thick.
  4. Grill to desired level of doneness.
  5. Serve on gluten free bun topped with cheese, tomato, lettuce, onion, pickles, bacon, avocado, ketchup, mayo, mustard, etc.
  6. Enjoy!

White Chip Chocolate Cookies {Bars}

Like many families, I try to maximize every dollar in my grocery budget. To minimize the financial impact of my need to be dairy free on top of gluten free, I have started making small batches of DF/GF desserts just for me while continuing to make regular GF baked goods for my family. An easy way to do this has been to cut cookie recipes in half and bake them as bars. I have included both versions below!


White Chip Chocolate Cookie Bars
Yield: 8x8 pan

Ingredients
  • 1 cup plus 2 Tbsp Bob's Red Mill Gluten Free 1-to-1 Baking Flour
  • 1/3 cup cocoa
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/2 cup (1 stick) butter, softened
  • 1/3 cup granulated sugar
  • 1/3 cup brown sugar
  • 1/2 tsp vanilla
  • 1 egg, room temperature
  • 1 cup white chocolate chips

Directions
  1. Preheat oven to 350°F. Grease 8x8 pan with nonstick cooking spray; set aside.
  2. Combine flour, cocoa, baking soda, and salt in small bowl.
  3. Beat butter, sugars, and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually stir in flour mixture. Fold in white chocolate chips.
  4. Dump dough into prepared pan and flatten into even layer.
  5. Bake 20-25 minutes, or until center is set.
  6. Cool completely before cutting into bars.


Dairy Free Option
  • Country Crock has a new line of plant based butters that are both dairy free and gluten free. I used the avocado sticks in this recipe, and they work just like real butter!
  • Nestle Tollhouse has a line of "Simply Delicious" baking morsels that are free from the 8 major food allergens. It's the first company I've seen that offers dairy free white morsels in-store!
  • Both of these products were purchased from Walmart, so you don't have to visit any specialty shops to make this recipe; you can simply pick up these ingredients during your regular shopping trip!

  • 2 cups white chocolate chips

Directions
  1. Preheat oven to 350°F.
  2. Combine flour, cocoa, baking soda, and salt in small bowl.
  3. Beat butter, sugars, and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually stir in flour mixture. Fold in white chocolate chips.
  4. Drop by rounded tablespoon on baking sheet lined with parchment paper. (This allows for easier removal from pan after cooling. You can reuse the same parchment between batches to cut down on waste!)
  5. Bake 9-11 minutes, or until centers are set. Cool on baking sheet 2 minutes before removing to wire rack.
  6. Cool completely before storing.

Gluten Free Vegan Cookie Cake

I don't really talk about my health issues on my blog even though that's what prompted me to start this whole thing in the first place. I've been suffering from chronic craniofacial pain for over four years, and the past week has been brutal. The severity of my pain has been at an all-time high, literally the worst it's ever been, and no external remedies provide relief. (OTC medications, ice, heat, massage, etc. don't even touch it.)

One thing I've learned during these last few years is that inflammation is largely responsible for how I feel day to day. And reducing inflammation starts with the food I put into my body. The first time I tried to go gluten free, I failed. I ended up trying again a few months later and have been successful ever since. Last year around this time I tried going dairy free, but I didn't really notice a change, good or bad, so I stopped being too careful about avoiding milk products. I've been saying to my husband for a while now that I think it's only a matter of time before my body decides for me that I must go dairy free, and that time is now. What better way to kick off attempt #2 than with a new recipe!


Gluten Free Vegan Cookie Cake
Yield: 8″ springform pan

Ingredients
  • 2 1/2 cups almond flour
  • 1/2 cup coconut flour
  • 1 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup melted coconut oil
  • 1/3 cup SunButter
  • 3/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1 cup vegan chocolate chips

Directions
  1. Preheat oven to 350°F. Grease 8″ springform pan with nonstick cooking spray.
  2. Add almond flour, coconut flour, baking soda, and salt to large bowl and whisk to combine. Be sure to remove any large lumps.
  3. In small bowl, add melted coconut oil, sunbutter, maple syrup, and vanilla; mix to combine.
  4. Add wet ingredients to dry ingredients, then mix. When almost combined, add chocolate chips. Batter will be stiff.
  5. Dump dough into prepared pan and flatten into even layer.
  6. Bake 18-20 minutes, or until top is golden brown and toothpick inserted in center comes out clean.
  7. Allow to cool completely on wire rack.
  8. Store in airtight container at room temperature.

Once you're ready to cut into the cookie cake, you may notice that the inside has turned GREEN! According to SunButter FAQs, the naturally occurring chlorogenic acid (chlorophyll) in sunflower seeds reacts with the baking soda when cooked, causing the green color when the cookie cake cools (and oxidizes). I know that’s awfully science-y, but I am married to a chemistry professor, after all! The take-home message from all of this: the green hue is totally normal, completely harmless, and 100% safe to consume.


I know what you're thinking: what if I want to avoid this whole green conundrum altogether?! Simply substitute your favorite nut butter of choice! Peanut butter and almond butter would be my top two runners up. The main reason I ventured into the SunButter world is that on top of gluten and dairy issues, I've also noticed I feel bad after I eat peanut butter. Did I mention that I'm grain free, too? Good thing I love to cook, because everything I eat these days is made in my own kitchen!

Bottom Round Roast

I decided to try something new for our family Christmas dinner this year (I can't believe that was already a month ago!) when I came across a beautiful roast marked down in price while shopping at Sam's Club. I usually put meat in the crockpot (because it's hard to mess it up that way!) so this was a bit of an experiment on my part. Boy am I glad I went out of my comfort zone! The end result was a juicy, tender roast on the inside complemented by a crunchy, mouth-watering herbal crust on the outside.


Bottom Round Roast
Yield: 6-8 servings

Ingredients
  • 3-4 lb beef bottom round roast, room temperature
  • 8 garlic cloves, peeled
  • 2 tsp sea salt
  • 1 Tbsp dried parsley
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp ground black pepper
  • 1/4 cup olive oil

Directions
  1. Preheat oven to 375°F. Line baking pan with foil and grease with nonstick cooking spray; set aside.
  2. Using a mortar and pestle, turn garlic cloves and sea salt into a paste. Stir in parsley, thyme, rosemary, pepper, and olive oil.
  3. Remove roast from packaging and place on prepared pan. Rub all sides with herb mixture. When finished, place roast in pan with fatty side up.
  4. Bake 18-20 minutes per pound, or until internal temperature reaches 125-130°F, for medium-rare (or until roast is at desired doneness and/or temperature).
  5. Remove roast from pan and place on platter or cutting board. Cover loosely with foil (so the meat doesn't "sweat") and allow roast to rest for at least 15-20 minutes before slicing.
  6. After resting, thinly slice the roast against the grain for the most tender bite. (If you cut with the grain, the meat will be much harder to chew.)
