Caprese Salad

My daughter was given this recipe by one of her school friends who is gluten free. With the simple list of ingredients and basic chopping skills required, it's a great way to involve your kids in the kitchen!


Caprese Salad
Yield: 6-8 servings

Ingredients
  • 1 English cucumber
  • 4 tomatoes on the vine
  • 4 oz mozzarella cheese pearls (about 1/2 cup)
  • 6 fresh basil leaves
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice

Directions
  1. Dice cucumber and tomatoes into bite-sized pieces; place in large bowl.
  2. Add cheese pearls to bowl.
  3. Slice basil leaves into thin strips and add to bowl.
  4. Drizzle olive oil and lemon juice over ingredients in bowl; gently toss to coat.
  5. Refrigerate an hour (or more) before serving.
  6. Leftover salad keeps up to 2 days in refrigerator.

Variations
  • Drizzle balsamic vinegar on individual servings for added flavor.
  • Add quinoa to make more filling and turn into main entree.

Ginger Sesame Kale Stir Fry

This aromatic, plant-based side dish is bursting with Asian flavors and comes together in less than 15 minutes!


Ginger Sesame Kale Stir Fry
Yield: 6-8 servings

Ingredients
  • 2 Tbsp sesame oil
  • 16 oz bag chopped kale (about 10 cups)
  • 1 Tbsp minced garlic
  • 1 tsp ground ginger
  • 2 Tbsp coconut aminos
  • 1 Tbsp lemon juice
  • 3 Tbsp sesame seeds

Directions
  1. Heat sesame oil in large cast iron pot over medium heat.
  2. Add kale and cook, stirring constantly, until it starts to wilt. Add garlic, ginger, and coconut aminos. Cook a few more minutes, to desired level of doneness.
  3. Transfer to serving bowl and toss with lemon juice and sesame seeds.
  4. Serve warm.

Baked Lentils

This barbecue-flavored side dish has sweet and savory elements all wrapped into one!


Baked Lentils
Yield: 8 servings

Ingredients
  • 1 cup uncooked French lentils
  • 12 oz pkg bacon, diced
  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 1/2 tsp minced garlic
  • 6 oz can tomato paste
  • 1/2 cup pure maple syrup
  • 1/3 cup coconut sugar
  • 1/4 cup water
  • 3 Tbsp white vinegar
  • 1 tsp salt
  • 3/4 tsp ground mustard
  • 3/4 tsp paprika
  • 3/4 tsp chili powder
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg

Directions
  1. Preheat oven to 350°F. Grease large casserole dish with nonstick cooking spray; set aside.
  2. Prepare lentils according to package directions; set aside.
  3. Cook diced bacon in large Dutch oven set over medium-high heat for 5-10 minutes. Drain excess grease, leaving a little behind to cook veggies. Add pepper and onion. Reduce heat to medium and cook 10 minutes, until veggies are translucent and tender. Add garlic and cook 2 minutes longer. Remove Dutch oven from heat.
  4. Stir in lentils, tomato paste, maple syrup, coconut sugar, water, vinegar, and spices. Mix until thoroughly combined.
  5. Pour mixture into prepared casserole dish. Cover with foil and bake 30 minutes. Remove foil and bake additional 30 minutes.
  6. Allow dish to cool 15 minutes, then serve warm.

Stuffed Mushrooms

In this simple appetizer recipe, tender white mushrooms are stuffed with creamy filling and topped with crunchy panko. These little bites of heaven are perfect for any occasion, served piping hot from the oven!


Stuffed Mushrooms
Yield: 1  1/2 dozen

Ingredients
For Mushrooms:
  • 24 oz package large whole white mushrooms
  • 1 Tbsp olive oil
  • 1 Tbsp minced garlic
  • 8 oz package cream cheese, softened
  • 1/4 tsp onion powder
  • 1/4 cup shredded cheese
For Topping:
  • 1/4 cup gluten free panko breadcrumbs
  • 2 Tbsp butter, melted
  • 1 tsp dried parsley

Directions
  1. Preheat oven to 375°F.
  2. Wipe mushrooms with damp paper towel to clean. Gently remove stems and set aside. Arrange mushrooms caps in baking dish coated with nonstick cooking spray.
  3. Finely chop mushroom stems. In small skillet over medium-high heat, cook stems and garlic in olive oil until tender. Add cream cheese, onion powder, and shredded cheese. Stir until well combined and cream cheese is completely melted. Fill each mushroom cap with creamy mixture.
  4. In small bowl, combine topping ingredients. Sprinkle over filled mushroom caps.
  5. Bake 25 minutes, or until mushrooms are tender and topping is golden brown.
  6. Serve hot from the oven!

Oven Roasted Squash

Every fall, my in-laws generously share their bountiful squash harvest with us. And every year, I forget what settings I need for my oven and timer to cook it. So this time around, I remembered to make note of that information so I no longer have to guess!


Oven Roasted Squash
Yield: 1 sheet pan

Ingredients
  • Pictured: 1 buttercup (round) & 1 butternut (oblong) squash

Directions
  1. Preheat oven to 400°F.
  2. Trim stems off squash. Cut squash in half and remove seeds.
  3. Line pan with foil. Place squash in single layer on pan. Pierce with fork. Lightly coat with nonstick cooking spray. Cover with foil.
  4. Bake about one hour, or until squash is fork tender.
  5. Let cool on counter, still covered, about 20 minutes.
  6. Scoop flesh into bowl. Cover and store in refrigerator (for a few days) or freezer (for a few months) until ready to use.

Oven Roasted Carrots

This simple side dish pairs perfectly with any main course and can be customized with your favorite combination of herbs & spices!


Oven Roasted Carrots
Yield: 4-6 servings

Ingredients
  • 2 lbs carrots
  • cooking spray
  • salt (and/or other seasonings)

Directions
  1. Preheat oven to 375°F. Grease rimmed cookie sheet with cooking spray.
  2. Peel carrots and trim ends, then rinse under cool water. Drain carrots on paper towel to remove excess moisture.
  3. Cut carrots in 1/2" thick round discs and arrange in single layer on prepared pan.
  4. Spray carrots with cooking spray and season with salt, to taste.
  5. Bake for 20 minutes, or until fork tender and edges brown slightly.
  6. Serve hot from the oven!

Vegan Carrot Raisin Salad

This bright and refreshing summer salad is packed with crunchy carrots, juicy raisins, and tangy pineapple, making it the perfect side dish for any picnic, potluck, or cookout!


Vegan Carrot Raisin Salad
Yield: about 5 cups

Ingredients
  • 4 cups shredded carrots
  • 1/2 cup raisins
  • 1/2 cup pineapple, cut into small pieces (if using canned, drain well first)
  • 1/2 cup vegan mayonnaise
  • 2 Tbsp pure maple syrup
  • 1 Tbsp lemon juice
  • 1/4 tsp salt

Directions
  1. Peel carrots and shred using food processor (or purchase pre-shredded carrots from grocery store). Blot carrot shreds with paper towel to remove excess moisture.
  2. In medium sized bowl, whisk mayonnaise, maple syrup, lemon juice, and salt until smooth.
  3. Add carrots, raisins, and pineapple to dressing and stir to thoroughly combine.
  4. Chill in refrigerator overnight to hydrate raisins and allow flavors to develop.
  5. Serve cold.

Easy Broccoli Slaw

When you're not in the mood for a leafy green salad, but you're not quite feeling like a hot vegetable side dish either, toss together this simple broccoli slaw for a quick and versatile addition to any meal!


Easy Broccoli Slaw
Yield: about 4 cups

Ingredients
  • 1/3 cup mayonnaise
  • 1 1/2 Tbsp apple cider vinegar
  • 1 Tbsp extra virgin olive oil
  • 1 Tbsp Dijon mustard
  • 1/2 tsp granulated sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 16 oz bag of broccoli slaw

Directions
  1. Whisk dressing ingredients in medium-sized bowl.
  2. Toss with bagged broccoli slaw until evenly coated. Serve cold.

Notes
  • This broccoli slaw recipe keeps really well in the fridge, and the flavors actually improve over time!
  • To transform this slaw into a main dish, try adding a combination of dried cranberries (Craisins), pistachios, crumbled bacon, sunflower kernels, slivered almonds, and/or blue cheese crumbles.

Squash Casserole {Dairy Free}

When I first published this recipe, it was laden with cheese. I altered the ingredients to accommodate my new dietary needs (I explain more here) and transformed this recipe into a deliciously dairy free side dish!


Squash Casserole {Dairy Free}
Yield: about 8 side dish servings

Ingredients
  • 1 lb yellow squash (2-3 medium) - peeled, seeded, chopped
  • 1 large (or 2 small) yellow onion, chopped
  • 1 tsp minced garlic (fresh, not dried)
  • 1/2 cup mayonnaise
  • 2 eggs, room temperature
  • 1/2 cup Daiya cheddar style shreds
  • 1/4 cup nutritional yeast
  • 1/4 tsp salt
  • 1 tsp dried parsley

Directions
  1. Steam squash, onion, and garlic in slow cooker on low for 6-8 hours, or until tender. Drain off excess liquid. Use immersion blender to desired smooth, or chunky, consistency.
  2. Preheat oven to 350°F. Grease casserole dish with nonstick cooking spray; set aside.
  3. Stir mayonnaise into squash mixture. Beat eggs and slowly whisk into squash mixture. Stir in cheddar shreds, nutritional yeast, and salt until evenly distributed.
  4. Pour into greased casserole dish. Sprinkle top with parsley.
  5. Bake 35 minutes, or until top turns golden brown. Serve hot from the oven and enjoy!

Note
  • Zucchini can be used in place of yellow squash, or try a combination of the two! Acorn squash also works well. Really, any savory squash will do!

Spicy Vegan Hot Corn Dip

This zesty dip is packed with bold Mexican flavors. And the best part? It doubles as both an appetizer and a side dish. Win!


Spicy Vegan Hot Corn Dip
Yield: about 4 cups

Ingredients
Sauce:
  • 1 cup raw cashews, soaked in water overnight
  • 1 cup almond milk
  • 1/3 cup nutritional yeast
  • 1 Tbsp lemon juice
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
Dip:
  • 2 (15 oz) cans Mexicorn, drained
  • 7 oz can mild diced green chiles, drained
  • 1 cup Daiya cheddar style shreds
  • 1/2 cup sliced green onions

Directions
  1. Preheat oven to 350°F. Grease small baking dish with nonstick cooking spray; set aside.
  2. In large bowl, combine Mexicorn, chiles, Daiya shreds, and green onion; set aside.
  3. Drain water from cashews. In high powered blender (such as Nutri Ninja), combine cashews, milk, nutritional yeast, lemon juice, chili powder, cumin, garlic powder, and salt. Blend on high until smooth and creamy. Pour sauce over veggies in mixing bowl and stir to combine.
  4. Transfer mixture to prepared baking dish. Bake on center rack for 15-20 minutes, or until dip begins to bubble and lightly brown on top.
  5. Remove dip from oven and serve immediately with your choice of tortilla chips, chopped veggies, or other dippers!

Notes
  • As written above, the dish is more mild in terms of spiciness. Want to kick it up a notch? Increase the level of heat by adding cayenne pepper, hot sauce, and/or chopped jalapeño.
  • This dish can be made ahead of time, so feel free to prep it all the night before and bake when you're ready the next day. Simply cover with foil (to prevent over-browning) and bake away!

Vegan Spinach Artichoke Dip

Craving comfort food? This warm, oven-baked dip has all the makings of its traditional counterpart (think: ooey-gooey, creamy goodness) without any of the dairy!


Vegan Spinach Artichoke Dip
Yield: small baking dish

Ingredients
  • 1 cup raw cashews, soaked in water at least 2 hours
  • 1 cup almond milk
  • 1/3 cup nutritional yeast
  • 1 Tbsp lemon juice
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 2 cups chopped onion
  • 1 Tbsp minced garlic
  • 8 oz bag frozen spinach, thawed & drained
  • 13.75 oz can artichoke hearts, drained & chopped
  • 7.1 oz package Daiya mozzarella style shreds

Directions
  1. Preheat oven to 375°F. Grease small baking dish with nonstick cooking spray; set aside.
  2. Saute onion in olive oil over medium heat until translucent and tender. Place onions in mixing bowl with minced garlic, spinach, artichokes, and Daiya shreds; set aside.
  3. Drain water from cashews. In high powered blender (such as Nutri Ninja), combine cashews, milk, nutritional yeast, lemon juice, garlic powder, and salt. Blend on high until smooth and creamy. (This sauce is delicious on its own, almost like alfredo for gluten free pasta... just a suggestion!) Pour sauce over veggies in mixing bowl and stir to combine.
  4. Transfer mixture to prepared baking dish. Bake on center rack for 25-30 minutes, or until dip begins to brown and is mostly set.
  5. Remove dip from oven and serve immediately with your choice of crackers, tortilla chips, chopped veggies, or other dippers!

Stuffed Acorn Squash

If you're looking for a meal that will warm you up both inside and out, you've come to the right place! Cooler weather outside means it's okay to turn your oven on for the afternoon to heat up your house while at the same time taking advantage of that bountiful harvest of squash you grew in your garden over the summer for a hearty, satisfying dinner.


Stuffed Acorn Squash
Yield: 6 servings

Ingredients
  • 3 acorn squash
  • 1 lb mild Italian ground sausage
  • 1 large onion, chopped
  • 1 bell pepper, chopped (any color will work, red used here)
  • 5 cloves garlic, minced
  • 1 cup shredded cheese (any kind you like, Mexican blend used here)

Directions
  1. Preheat oven to 350°F. Line baking sheet with foil.
  2. Cut each acorn squash in half and scoop out seedy inside. Place on baking sheet with inside facing up and skin side facing down. If squash halves won't lie flat, slice off a small piece of squash skin on underside to level it. Pierce inside flesh with fork. Lightly coat squash with nonstick cooking spray and tent with foil. Roast in oven for 80 minutes, until flesh is fork tender.
  3. While squash is roasting, brown sausage on stove top over medium heat. Once sausage is no longer pink, add onion, pepper, and garlic. Cook until vegetables are translucent.
  4. When squash is ready, remove foil tent and discard. Spoon sausage mixture into cavity of each squash half. Sprinkle with cheese. Return to oven for 15 minutes, until cheese is melted and turns golden brown.
  5. Serve warm from the oven. All you need is a spoon!

Casserole Option
  1. Follow steps 1-3 as stated above.
  2. Once squash is tender, scoop flesh into large bowl and use potato masher to reach smooth consistency.
  3. Grease 9x13 pan with nonstick cooking spray. Spoon squash into prepared pan; level with spatula. Spoon sausage mixture on top of squash layer. Sprinkle with cheese.
  4. Cook in 350°F oven for 25-30 minutes, or until cheese is melted and begins to brown.

Moroccan Quinoa Salad

This vegan salad is full of color, texture, and crunch! Serve it as a main meal for a quick weeknight dinner, and then pack up the leftovers to bring to work the next day for lunch. Two meals in one = WIN!


Moroccan Quinoa Salad
Yield: 3-4 servings

Ingredients
Salad:
  • 1 1/2 cups cooked quinoa (or 1/2 cup uncooked)
  • 1 cup matchstick carrots
  • 4 green onions, thinly sliced
  • 3/4 cup chickpeas, rinsed & drained (half of 15 oz can)
  • 1/3 cup chopped dates (or regular raisins)
  • 1/3 cup golden raisins
  • 1/3 cup chopped flat leaf parsley (or cilantro)
  • 1/2 cup chopped pistachios, for serving
Dressing:
  • 2-3 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 Tbsp honey (maple syrup or agave, if vegan)
  • 1/2 tsp salt
  • 1/2 tsp cumin powder
  • 1/8 tsp chili powder

Directions
  1. Cook quinoa according to package directions. Allow quinoa to cool completely. (Put in refrigerator to speed this up!)
  2. Once quinoa is cooled, toss all salad ingredients together.
  3. Combine dressing ingredients in small mason jar and shake until mixed through. Drizzle dressing onto salad and toss to combine.
  4. If consuming immediately, top individual servings with chopped pistachios. Or, store in refrigerator for later! Salad ages well. :)

Spiced Bacon Pecan Sweet Potatoes

This dish fully embodies the saying, "Sugar and Spice, and Everything Nice!" The sugary maple syrup paired with the sweetness of the potatoes contrasts nicely with the heat provided by the chili powder and cayenne pepper.

As we approach the holiday season, this savory recipe is the perfect side dish for family get-togethers at Thanksgiving and/or Christmas. It also makes for a quick and easy weeknight dinner!


Spiced Bacon Pecan Sweet Potatoes
Yield: 6-8 side dish servings

Ingredients
3 large sweet potatoes, peeled and cubed
1/2 cup cooked bacon crumbles
1/2 cup chopped pecans
1/4 cup pure maple syrup
1 tsp chili powder
1/2 tsp salt
1/2 tsp cinnamon
1/8 tsp cayenne pepper (optional)

Directions
1. Preheat oven to 400°F.
2. Lightly grease rimmed baking pan with nonstick cooking spray. Arrange potato cubes in single layer. Bake 20-25 minutes, until potatoes are tender and begin to darken in color.
3. Scoop potatoes from pan into large bowl. Add bacon and pecans. Drizzle with maple syrup and sprinkle all spices on top. Gently stir to evenly distribute all ingredients.
4. Serve warm.

Sesame Peanut Butter Noodles

Asian flavors are always a favorite at our house! Enjoy these delicious noodles as a vegetarian entree or serve them as a side dish. To transform this recipe into a complete meal, simply add cooked, shredded chicken breast and steamed, stir-fry vegetables!


Sesame Peanut Butter Noodles
Yield: 4 cups

Ingredients
8 oz package rice noodles
1 1/2 Tbsp creamy peanut butter
2 Tbsp pure sesame oil
2 Tbsp honey
2 Tbsp soy sauce (or gluten free tamari)
1 1/2 Tbsp rice vinegar
1 garlic clove, minced
1/2 tsp ground ginger
pinch of red pepper flakes (optional, adds some heat!)

For garnish:
 4 green onions, sliced
 2 tsp sesame seeds

Directions
1. Cook and drain rice noodles according to package directions.
2. In small bowl, heat peanut butter in microwave for 15 seconds until melted. Add sesame oil, honey, soy sauce, rice vinegar, garlic, and ginger. Whisk until well combined. (Peanut butter should completely break down to create a smooth sauce.)
3. Pour sauce over hot noodles. Toss to coat.
4. Top individual servings with 1 sliced green onion and 1/2 tsp sesame seeds. (For added crunch, try chopped peanuts!)

Mediterranean Quinoa Salad

This post is not so much a specific recipe as it is a flavor profile you can play around with to your liking!

While my husband and I were in Hawaii celebrating our 10 year wedding anniversary, he regularly ate a Mediterranean-style quinoa salad from the local ABC store. When we returned home to South Dakota, I did my best to recreate this dish that he enjoyed eating so much!

The finished product is a little bit different every time I make it because I just guesstimate the amount of each ingredient. Once the salad "looks" right, I do a taste test to make sure I like the balance of flavors and textures. Very scientific, I know! ;)


Mediterranean Quinoa Salad

Ingredients
quinoa
sun dried tomatoes
artichoke hearts
chickpeas (garbanzo beans)
feta cheese (crumbled)
pine nuts
sun dried tomato salad dressing (or other similar vinaigrette)

Directions
1. In medium-sized pot, combine 1 cup quinoa and 2 cups water. Bring to gentle boil over medium heat, then reduce heat to medium-low, and gently simmer until quinoa has absorbed all water. Remove from heat, cover pot, and let quinoa rest for 5-10 minutes. Uncover pot and fluff quinoa with fork. Put in refrigerator to cool completely.
2. While quinoa is cooling, drain sun dried tomatoes on paper towel to remove excess oil and then chop into smaller pieces. Drain water from artichoke hearts, slice into quarters, and then chop into smaller pieces. Drain liquid from chickpeas.
3. Toss all ingredients together in large serving bowl, starting with small amount of dressing and adding more to taste. (For reference, I used half jar of sun dried tomatoes, full can of artichoke hearts, half can of chickpeas, entire 4 oz container of crumbled feta cheese, and half bag of pine nuts.)
4. Salad is delicious served at room temperature and also stores well in refrigerator!

Roasted Sweet Potato Quinoa Salad

This salad has a bright, bold flavor thanks to the zesty lime vinaigrette enrobing the fluffy quinoa, sweet potatoes, tart cranberries, fresh herbs, and flavorful spices.


Roasted Sweet Potato Quinoa Salad with Zesty Lime Dressing
Yield: 4 servings

Ingredients
Salad:
 2 medium-large sweet potatoes (washed, peeled & cubed into 1-inch chunks)
 salt & pepper
 1/2 cup dried quinoa
 1 cup water
 1/2 cup dried cranberries
 1/2 cup fresh cilantro and/or parsley, roughly chopped
 1/4 cup sliced green onion
 2-3 Tbsp raw pumpkin seeds (or sunflower kernels)

Dressing:
 4 Tbsp extra virgin olive oil
 2 Tbsp freshly squeezed lime juice
 1 Tbsp apple cider vinegar
 1 Tbsp honey (maple syrup or agave, if vegan)
 1/8 tsp cinnamon
 1/8 tsp cumin
 1/8 tsp cayenne pepper
 1/8 tsp salt

Directions
For the Roasted Sweet Potatoes:
 1. Preheat oven to 400°F. Spray baking sheet with nonstick cooking spray. Transfer chopped sweet potato to prepared baking sheet and spray with additional nonstick spray. Lightly season with salt and pepper.
 2. Bake for 20-25 minutes, or until potatoes are tender. Allow potatoes to cool slightly before handling.
For the Quinoa:
 3. While sweet potatoes are roasting, combine quinoa and water in medium-sized pot. Bring mixture to gentle boil over medium heat, then reduce heat to medium-low and gently simmer until quinoa has absorbed all of the water.
 4. Remove from heat, cover the pot, and let it rest for 5-10 minutes. Uncover pot and fluff quinoa with a fork. Set aside to cool.
For the Dressing:
 5. While quinoa is cooking, add oil, lime juice, vinegar, honey, spices, and salt to small bowl. Whisk until salad dressing comes together. Set aside.
For the Salad:
 6. In large bowl, add slightly cooled sweet potatoes, slightly cooled quinoa, cranberries, fresh herbs, and green onion. Pour salad dressing over top of veggies and quinoa. Gently stir to combine, ensuring everything is evenly coated.
 7. Just before serving, garnish with raw pumpkin seeds on top.
 8. Enjoy immediately or store in refrigerator for up to 3 days.

Creamy Pea Salad

This side dish can be prepared ahead of time, so it is perfect when you are entertaining guests in your home or need to bring a potluck dish to share at an event.


Creamy Pea Salad
Yield: 6-8 servings

Ingredients
2 (16 ounce) packages frozen peas, thawed
1/2 cup diced cheddar cheese
1/2 cup diced mozzarella cheese
1 medium white onion, chopped
1 cup mayonnaise
salt & pepper, to taste

Directions
1. In medium bowl, combine peas, cheeses, onion, mayo, salt, and pepper; mix well. Refrigerate until serving.
2. When ready to serve, sprinkle with bacon.

Honey Mustard Quinoa Salad

This salad is a bright and tangy addition to any backyard barbecue this summer!


Honey Mustard Quinoa Salad
Yield: 6-8 servings

Ingredients
3/4 cup uncooked quinoa
1 1/2 cups water

Honey Mustard Dressing:
 1/4 cup honey (or agave nectar)
 1/4 cup Dijon mustard
 1 Tbsp olive oil
 2 Tbsp rice vinegar
 1-2 cloves garlic, minced
 1/2 tsp ground black pepper
 1/2 tsp salt

1/2 cup dried cranberries
2 celery ribs, diced
2 carrots, peeled and diced

Directions
1. In a medium-sized pot, combine the quinoa and water. Bring the mixture to a gentle boil over medium heat, then reduce the heat to medium-low and gently simmer the quinoa until it has absorbed all of the water. Remove the quinoa from heat, cover the pot and let it rest for 5-10 minutes. Uncover the pot and fluff the quinoa with a fork. Set it aside to cool.
2. Combine all dressing ingredients in a small bowl and whisk until well combined.
3. Once the cooked quinoa has cooled completely, toss together with remaining ingredients and dressing. (Feel free to start with just a portion of the dressing and add more to taste. Store remainder in refrigerator for leftovers!)
4. Serve at room temperature or chilled.

Brussels Sprouts, Butternut Squash, Cranberries & Pecans

This beautiful side dish is bursting with complementary colors, textures, and flavors!
 • Colors: orange squash, green sprouts, red cranberries
 • Textures: crispy sprouts, tender squash, chewy cranberries, crunchy pecans
 • Flavors: sweet syrup, salty sprouts, cinnamon squash, tart cranberries, nutty pecans


Roasted Brussels Sprouts, Butternut Squash, Cranberries & Pecans
Yield: serving size varies

Ingredients
1 lb Brussels sprouts, sliced in half
1 small butternut squash (peeled, seeded, cubed)
3 Tbsp olive oil
1/4 tsp salt
1 tsp cinnamon
1/2 cup dried cranberries
1/2 cup pecan chips
2 Tbsp pure maple syrup

Directions
1. Preheat oven to 400°F. Coat rimmed baking pan with nonstick cooking spray.
2. Place Brussels sprouts, cut side down, on one half of pan and butternut squash cubes on other half of pan.
3. Drizzle olive oil over top of all veggies in pan.
4. Sprinkle salt over sprouts and cinnamon over squash.
5. Bake in preheated oven for 20-25 minutes, until veggies are browned.
6. Let cool in pan for 10 minutes, then put sprouts and squash in large bowl. Add cranberries, pecans, and maple syrup. Toss to coat.
7. Serve immediately and enjoy!
